Saturday, September 15, 2012 - "Mr. & Mrs. White" Birthday Dinner (Private Room, Caprice Restaurant, Four Seasons Hotel, Two IFC, Hong Kong): Decanted for 45 minutes before serving. Bright, shiny golden straw colour. Nose is pomelo, a touch of vanilla pod, caramel and some nicely refined oak…..very balanced and multidimensional. Palate has a wonderful lemon-drenched freshness of initial attack then a roll of growling resonance of roasted whole lemons, minerals and crushed rocks. However, on the palate the oak is a bit too predominant and there is a bit too much alcohol that hasn’t yet found its place…..needs more time to fully express itself. Come back in 5-7 years’ time. I personally preferred the citric, high-noted freshness of the preceding Dom. Bouzereau Mersault Les Perrieres 2007 but I was in a minority here. That said, ultimately, this wine will almost certainly outclass it.
