Tuesday, May 9, 2017 - After 2 hr ox, my date, after seeing me pouting, said "It tastes like a Rioja." Brutal. Leather and Spice. Bitter/Mono.
After 14 hour ox: Leather, salt, herbs de provence, black raspberry liquor, kirsch.
Next bottle 2019/2020.
Try pairing with a salty pesto olive dish and mull a few raspberries. Advise 16 hour oxidation/10 hour decant.
