Monday, April 23, 2018 - Not a huge champagne drinker, but starting to get more into it. Initially it had a little funk that wore off after 10 minutes of being open. Nice bottle with good acidity that paired well with many of the earlier courses that night (brought to El Ideas in Chicago for a 12 course tasting menu). It definitely has more life left. Enjoyable, but nothing mind blowing - would recommend serving with food.
