Friday, January 25, 2019 - Billecart is one of the very best NV champagnes, and with NV as good as this, I rarely bother with prestige cuvees.
I have a habit of ageing NV champagne for a few years as I like the honeyed, bready complexity it gives. So I have drunk 6 of these over the last year with similar notes, all stored in a wine fridge at 55 degrees. Lovely nose of citrus, honey, quince and toast, very well balanced and refreshing, without the overt sweetness of many NV and with more power and depth than most. A lovely drink any day in balmy Singapore.
