Saturday, September 26, 2020 - For over a decade I have chosen the ‘85 vintage of Dom Pérignon as the best to drink now. Nothing has changed. The most impressive character is how it evolves, deepens and gains complexity for however long you leave it in the glass, however much it warms up and however many bubbles it loses. Beautiful light gold color. Pinpoint mousse leads to a delicate couronne. Tangy mellow acidity gives focus without angry acidity. Some bourbon and caramel too. Dom Pérignon at its very best.
