Wednesday, August 11, 2021 - Served as an aperitif with *those* parmesan biscuits at Chez Bruce. 2009 base, 2014 d/g. This was a sublime bottle of champagne and easily my favourite of 2021 thus far. Smells like you've crawled inside an almond croissant and tastes like you're eating your way out of it. This is racy, rich, complex, peachy and spicy. Such exoticism might seem excessive were it not tempered with tantalising, lacy acidity, which lends a sense of pert respectability to what is otherwise an exercise in perfect decadence.
