Tuesday, September 28, 2021 - This is just too young. With about 4 hours of air, some honeyed notes emerged, balanced the apple acidity that had been present all along. The following day, there was more complexity -- some menthol, some tropical fruitiness -- but still restrained, and always encased in that acidity. I don't have a clear sense of when to open the next bottle, nor am I altogether confident that the optimal expression will justify the price, but I'm going to try to forget about the rest of this stash for another 5 years at least.
