Saturday, December 11, 2021 - A tale of two wines. For the first 60 minutes, it's quite good. Then it goes sour and bitter. Note below is for the first hour. After that it becomes undrinkable.

Super delicious nose of sweet cherry compote, sage, tarragon, lavender, strawberry, plum, and leather. Medium bodied with finely grained, dense black tea tannin that's mostly resolved and moderately bright acid. Structurally this is still a significant wine with fairly stiff edges. The mellow flavor profile includes cherry, blood orange, violet, strawberry, and Herbs de Provence. With 30 minutes of air this starts to flush out. Probably has a good 3-5 year window before it starts declining.
