Tuesday, February 7, 2017 - Opened to breathe, slow ox, for 6h. Soft distinctive nose of red fruit, methol, baking spice, and oak. The palate is still very primary with luscious red fruit, cherries mostly, plums, woodsy mushroomy flavors, and chewy tannins. Lingering finish, with hints of graphite. A good example of a young, well made St. Emilion. Tasty tonight with grilled sausages. If you have a bunch of these I recommend holding out for at least another 3-5 years before cracking them open in earnest. If you want to try it now, go for it but plan ahead: I suggest some serious aeration or decanting to soften the tannins before tasting. Smooth and delicious on Day 2.
