Saturday, January 8, 2011 - Wineterfest 2011: Wine of the night. This is definitely still a baby though. decanted for about 2 hours before serving, and it evolved tremendously through the 90 minutes we were drinking it. Dark purple / garnet in color. nose was quite tight at the outset, with cassis. Flavors of cassis, chocolate, touch of burnt wood and a hint of saddle leather. Beautiful structure and lots of tannins at this point. This wine opened up throughout the night and kept changing. This seems to be one that has another 10-15 years +, during which it will continue to evolve and pick up secondary flavors.
