Thursday, August 12, 2021 - The 2000 Palmer is really singing right now. Decanted for about 2 hours, then drank over the next two with a New York strip and mushroom soufflé. Distinct notes of blackberry, currant and just a hint of mint. Over the course of the evening the wine settled into perfect equilibrium with wonderful structure and finesse, with a long and silky finish. Just a really enjoyable wine.
