Tuesday, April 18, 2017 - Maybe we didn't give it enough time but this came across as very closed and mute. Mostly just acid and minerals. Hard to tell what was underneath. Sure, it was still quite enjoyable but I was hoping for a better showing. I guess (hope) this will open up some with cellaring.

4/18/2017 10:03:00 PM - Far too young unfortunately. Hubacker is completely closed at the moment. I would not try it again before 2020 and then with lots of air. Better would be 2025+ though...

4/25/2017 10:14:00 AM - This was so stunning just after bottling, but it has now retreated into its shell. Give it some time! It really is as great as all the pundits, me included, say. If you do want to drink one young the Kirchspiel is normally the first to open up.
