Thursday, February 8, 2024 - Sushi Katori: Bouquet showing waves of popcorn, starfruit, wax, flint and hazelnuts with fruit persistence and minerality on the palate. There is fantastic fruit concentration here but one gets the sense we committed infanticide. With time in decanter and in glass, white peaches and snow pears emerge fleetingly before shutting down and turning a touch too acidic. There is surely immense potential, both depth and flavour complexity, that age will surely bring someday.

Meant to go in a blind against the PYCM but the PYCM was too atypical that it was an easy guess that this was the Coche.
