Tuesday, December 5, 2023 - Carol was gifted this bottle by great CT friend Agelvis, a while back and with family visiting and Carol making her famous Miso glazed sea bass, it was a perfect time to pop it open. Decanted in the cellar for about 1 hour then poured at the table as we sat down to eat. Cloudy medium yellow in the glass indicative of its leesy unfiltered process. Sweet lemon cream, vanilla, white florals and maybe slight beeswax on the nose. Palate reflects much of the same but the main takeaway is the near perfect balance of the wine in all regards. This improved a point or two from 93 to 95 over an hour of more air and warming a bit to room temp. It remained balanced throughout and even after our meal as we sat discussing various menu/meal preparations for the remainder of the week. The wine is not overly weighty, nor oaky nor buttery, nor over acidified, it is expertly crafted and balanced. My brother had never had one of these before even though Aubert was the #1 wine of choice of his former CEO of many years. He very much enjoyed tonight's bottle.
