Tuesday, September 19, 2023 - Decanted a portion with stir and it opened after about 30-60 min. Vacuvin’d the rest and similar time needed on day 2 and 3. Deep salmon and medium pink color. Strawberry, herb, mineral on the nose. Agree with other notes that was very off and strange chlorine at first until opens. Watermelon Jolly Rancher, hint of cherry, white pepper with about 30-33 sec finish. I felt that it needed more fruit. Acidity was not strong enough at first and then presented itself after opening. This does need decant but in my limited experience I prefer other Tavel options
