Tuesday, April 17, 2012 - working with wine 2012 seminar 1 - chardonnay (Pyrmont): Lemon, bright with medium minus intensity. On the nose there are notes of butter, cream, cinnamon spice, stone fruit over green apple and lemon notes, minerality, a touch of struck match and, odd those this sounds, a certain roundness. In the mouth the wine has medium plus acid, citric tan - more lemon than apple, spice, minerals, low phenolic grip., long finish that carries the tartness and introduces slight oak.
