Wednesday, September 6, 2023 - France Trip: Paris, Champagne, Burgundy; 9/3/2023-9/17/2023 (Paris, Champagne, Burgundy): Medium sockeye salmon color. Drank a glass over 2 hours at Champagne Laurent-Perrier. Cold maceration, crushed by weight, not pressed, 24 to 36 hours and up to 72 hours. Color wil vary by vintage, but the goal is the same aromatic expression consistently. What a joy to sit and drink this while chatting with our hostess Angela about how this wonderful Rose is made every year. Simply a joy, and at a consistent level that few Rose Champagnes achieve and certainly even more rare in NV. blissful wild strawberries, raspberry, cinnamon spice, a touch of vanilla and cream, so very elegant and tingly long.
