Paired rather nicely with traybake from [Ottolenghi](https://amp.theguardian.com/food/2020/oct/31/yotam-ottolenghi-recipes-autumn-veg-buttered-kohlrabi-yuca-fries) which was unexpected!
Day 2/3 - seems less intensely briny. Still salty, but now refreshing and mouthwatering with some apple notes. Just 👌🏻 with some prosciutto san Daniele or olives.
Seemed to oscillate between too briny/intense and beautifully refreshing depending on the day and what I was eating with it.

A complex profile, it’s fresh and clean but also develops notes of a damp cellar and germolene. Nonetheless, it’s bone dry, tangy and saline with green hazelnuts yet develops a hint of residual sweetness on a very long and fine finish. A multi-layered fino which really repaid aeration over 48 hours. CHP 89pts

Colour: medium brown, bright, clear. Nose: full, q musky, nutty. Taste: med body, w assertive, v nutty , med finish, v dry, nutty. Overall, lacks elegance and nose bothers me. By the glass in a tapas bar. Retry.

A house favourite and a bargain from TWS. Fino with a bit of aging essentially, not as fresh and saline as a regular fino, but more complexity and depth which makes it a good foil for grilled seafood, cheese or other dishes where you need some umami in your glass. Maybe not a beginners fino but highly recommended

Lovely limpid mid amber. Nose is all yeasty flor. Palate is light, great acidity and good length. Nice viscosity - standard issue fino perhaps, but the acidity is very persistent and refreshing making this a very decent wine.

Grandisimo vino de Romate, de lo mejor de la casa.
Mantequilla tostada, nata agria, avellanas y un deje de mar, el barco atracando en el puerto. Se nota la vejez en la nariz, muy bien llevada, con equilibrio y pureza. La boca habla de lo mismo, seco y vertical, pero educado al mismo tiempo. Sabroso y complejo.

La Sorprendente Aparición de la Mantequilla Agria (Barra Territorio Era - Madrid): Nose is queen here. Complexity to the limit with a rancid aromas which transports me to a decadent Indian atmosphere, where salinity invades everything. Superb. Unfortunately on the palate this fino hadn't the same high level: short aftertaste, no length at all, a bit muted to my taste. Faith in Sánchez Romate restored.
La nariz es la reina aquí. Complejidad al límite con unos aromas rancios que me transportan a una decadente atmósfera india, donde la salinidad invade todo. Magnífico. Por desgracia en el paladar este fino no tenía el mismo alto nivel: postgusto corto, sin longitud en absoluto, un poco apagado para mi gusto.

Deep gold colour, almost brown. Attractive, mature nose. Complex, deep, nutty palate. Dry, but gives the impression of not being quite as dry as might be expected for a fino. Excellent balance and length. A versatile wine on its own or with food and a real bargain IMO.

A deep amber hue. Plenty of orange blossom and preserved lemons on the nose. Creamy and rich on the palate, which also shows a hint of sweetness. Lacks the pitch perfect structural composition of previous bottles but this is still a delight.

it's funny how a bottle can change your opinion. this is the second i have opened of this, the first disappeared sharpish and i recall much enjoyment. today is very different. massive nut and acorn aromas, a touch of saltiness on the palate. much as before? no. today i am in full control and recognise this for what it is: sherry by numbers. would i love this in a bar in the heat in spain at €1-2 a glass? sure. do i want it to be 1 of 8-12 sherry bottles i drink in a year? ok. 2 of 8-12? no way, big mistake. it's not good enough for that. it lacks finesse. it lacks elan. it is harshly judged because of its situation in my situation.

The label tells me that this has been aged for 8 years, does this not make it a Fino-Amontillado? This certainly has a darker colour than most cheap Finos. There is plenty of weight and gritty substance in the mouth. Invigorating salty minerality, aromatics of roasted almonds and green olives. Creamy finish. Another example of what remarkable value there is to be found in Jerez - this brilliant little wine cost just seven pounds and fifty pence.

It is the darkest Fino I have ever seen, real golden/amber tones present. Even though it is only 15% it smells incredibly potent and profound; the depth of character it displays is quite arresting. There are all the Fino nutty aromas one would hope for, but they are quite striking in terms of their power and complexity. Brilliant stuff to sniff. The palate also has a prodigious density and layers of complex flavours charged with energy. It is pretty god-damned concentrated too. The finish just lasts and lasts. I think this is the best Fino I have ever tried and it cost me a mere £7.95 a bottle – an obscene bargain for such a captivating wine.

A complex profile, it’s fresh and clean but also develops notes of a damp cellar and germolene. Nonetheless, it’s bone dry, tangy and saline with green hazelnuts yet develops a hint of residual sweetness on a very long and fine finish.
