Opened and decanted for about 45 min - enjoyed over an hour. Lovely wine. Probably biased as we visited the vineyard on our honeymoon in fall of 92. Absolutely delicious I king well. Currant, spice, a little leather . Still some light tannins and lively acidity. Not necessarily the longest finish, but a real pleasure. Enjoy!

During a Commanderie event. From Imperial. for many this was the wine of the night, beating the 2004 Haut Brion (also Imperial) and the 1998 Chateau Margaux. Beautiful mature Merlot nose with truffles, gingerbread, blueberry, cinnamon. Soft palate with well integrated tannins and enough acidity to support it. Simply wonderful.

Strangely enough, the cork showed sign of slight seepage. It is the last bottle or a 12 case bought at the time and well stored. The other bottles did not show seepage. Upon opening, nice fruit but also drying end. Two hours later, very nice, broad, satisfying. Later, the nose becomes tawny port like. But the drying tanins come back. One hour later, the tannins are less prominent. A very enjoyable wine. Still many years of life ahead. The day after: Decanter smells nice but not very strong. The wine is declining.

Stunning. Stand up for half week and decanted prior to serving to get rid of sediments. Funky mushroom forest floor pencil nose that I haven't been encountered in bordeaux for a while. It’s very pronounced. On palate the mouth feel is silky and very long finish. Great night with 2 friends born from the same year this pavie was produced.

Tues Wine Night @ Imperial GWC!: 1 of the 2 bottles which I brought tonight. Classical and matured on the nose. Red fruits, dried strawberries - palate is rather medium bodied, with smoked herbs, figs, black tea and slight tinge of bramble. Not opulent like the younger 2000s - this needed some time to come together and drank nicely after. CC commented that this may be a slightly off bottle. Till the next bottle!

Medium purple edging to garnet. Decanted for 3 hours prior to serving. Honestly, perhaps a bit too long - lovely nose after an hour, by the time we got to the appropriate dinner course, it was a bit subdued. Balanced but not rich or commanding - was looking for an elder statesman, but instead got a retiring civil servant. Solid and with some notable achievements, but lacking the power to really wow us.

Even after two hours of aeration a bit shy nose, on the palate violets, tobacco, leather, earthy tones, elegant and light, not a blockbuster, a tad round and soft with some sweetness, a classy and good claret which did not quite live up to its expectations this night, in all probability a bottle thing.

Very nice. It held up extremely well over 28 years. Very smooth with pure fruit flavors. Excellent balance, and beautiful color. Definitely not beyond its drinking window. Very similar to the way I remember another bottle I opened way back in 2002, when it was the group's favorite. This one is just a bit softer.

Looking a little older than its true, due to the lightness of color, the nose served up its delicate blend of forest floor, sweet, red plum and cherry and tobacco notes with little to no effort. Softly textured on the palate, with an earthy, fresh, bright red berry finish.

Our last bottle. Served with a lamb ragu over polenta. Still showing very well. Bouquet came on as soon as I pulled the cork. Fruit there, tannins balanced, finish long and a little tannic - great pleasure 27 years later.

I wish all of my investments had the same rate of return! Purchased upon release for $67/bottle, the auction price now approximates $162. Just the beginning of browning on the edges suggestive of what this wine will become. At the core though, a dense Barolo-like, rich red that speaks very much to the present.
A slight sense of Beefeater Gin on the nose. Quite heady with Juniper, and tight tannins. The strength of this wine suggests a drinking window ten years ahead but only for the dedicated few who will give up the power of raw fruit for a more nuanced tasting experience.
On its own, the wine is a bit stringent and tight. With a table of food though, the wine melds easily and plays quiet conductor to the more showy dishes on the table. Be prepared to put your mind to work, cyphering what this wine is versus what you think it should be.

Q4 - 2016 Tasting - Anything Goes Theme (New York, NY): #3 of 22 wines tasted double blind. From looking and smelling, it was obvious we were back to the old world with glass three. Color was browning and a bit cloudy. The nose was a bit funky with earth and leather. Not a lot of fruit left on the palate but all those lovely tertiary flavors were showing up in full measure. Never had a Pavie before and from what I have read about about how big and modern they can be this really surprised me on reveal because this wine was very elegant. This was top second quartile for me, and second place overall for the group with 9 pennies voted

Q4 2016 Wine Club (The Apt): Wine #3: We clearly have some Bordeaux lovers in the group as this was one of the favorites. The age on it is clear and as another note mentioned it's prob time to start drinking up. Fruit mostly faded, but still has notes of soy sauce and leather. (9 pennies)

St Emillion First Growths (Chez Bruce, London): Deep mid ruby. Dense and really rather gorgeous nose. Ripe and full with a nuanced, floral, suave nose. Quite rich on the palate without being fat in the slightest. Possibly again, just a little dry on the finish. ****

I like this better than the '90 Figeac. It hit its stride around the 20 min mark to deliver haunting aromas and flavors of cabernet franc. Deep, deep baked cherry, dried berry leaf, maduro tobacco and forest floor. Incredibly rich and structured.

1990 Bordeaux Horizontal: Blind. Deep fruit, some development, elegant smell; extreme length, but above this it is the intensity that carries the wine, almost peacock tail finish. Structured and fresh, well integrated tannins.

From memory: Brought to a dinner party and served after an 89 Pontet Canet. My two previous bottles have been great, but this one sadly lacked the depth and complexity of the others. Granted it didn’t get the lengthy decant that has shown to benefit this wine on earlier occations, though in this case I think too much air only would have made things worse – this was probably just a tired bottle (the fill was OK, but the cork was a complete mess). By all means a nice drink, but not something you’re happy paying $150 for (89-90 points).

The cork is in excellent shape. The wine is deep red with no signs of browning. The nose was earthy with mushrooms and ripe currants. On the palate the wine showed many layers of flavors with superb balance and length on the palate. Consumed at dinner with friends. Decanted 1 hour before serving.

Decanted and served about an hour later. This wine is in a beautiful spot. Leather, blue and black fruits, eucalyptus and just the faintest hint of dusty earth on the nose. Powerful palate, still very seriously structured and textured, but tannins fully resolved which allows the fruit to shine. Nicely balanced between primary and secondary. Still has many good years left, but to my taste this is close to its peak!

Very Smooth and intense st. Emilion.. The wine was tight and closed when opened and poured, but 1 hour in the glass really does it.. Very well intereated tannins, and yet a thickness that fills your mouth. This is a yummi wine that has the power for another 5 years. But if you like a power wine,, drink now, cause some of this might fade of with cellaring.. I have 5 left. I will look forward to the next bottle..

Great claret at peak of maturity. Certainly benefited from some time in the decanter (3 hours in this case but I will try longer with my next bottle). Mellow cedar and gentle black fruit nose, leading to beautiful mouth feel from gentle tannin. Perfect with roast rib of beef.

As everyone else has said, this picks up weight and is an overall better package the more air you give it. I decanted for 6 hours, drank over 2 and it kept getting better. Decanted for close to five hours before tasting. Served after an 89 Gruaud Larose, and naturally benchmarked against it. Also showing classic aged Bordeaux characteristics, but is a little darker, a little fruitier and a little brawnier than the GL. Not quiet as elegant, but packing more of a punch. As others have pointed out before, this wine benefits greatly from air exposure. It’s astonishing how much weight and depth it gained during the course of the evening. While the first glass had problems competing with the GL (91p), the last glass was nothing short of exceptional (95p).

C: Brownish red, brick-red at the edges. Quite a light colour. N: Relatively sweet fruit, red berries, smoke, earthy tones in the background, definite tobacco, almost menthol cigarettes. Herbal. P: Light on the attack, the red fruit/berry component builds through the mid-palate and the smokey, oaky tannins take over for the marathon finish. Surprisingly thin and one-dimensional for this calibre/price. Very smokey. Still very dry tannins, but they're quite gentle and certainly not overly harsh. Develops leather notes with a lot of air. The finish lasts for ages, with smoke and gravel. O: A dull effort for a wine of this price. Perhaps not the greatest bottle, as the fruit just wasn't there on the palate. Clean, smooth, long and balanced, but overly smoky and ultimately slightly too boring. 85-86 points
Decanted for 7 hours:
C: The colour seems brighter and healthier. N: Similar nose with a heavier concentration of fruit. P: Powerful, concentrated, pure fruit (plums with thick healthy skins) from the start. The fruit is embellished by thick, sweet vanilla and a great depth of flavour and good weight on the palate. Also some herbal notes and freshly fallen pine needles. The mid-palate is smoky, but not overpowering. The tannins are grippy, but not aggressive at all. Rounded, gentle, dry tannins. The finnish is fantastically long with a bit of alcoholic heat, grippy tannins, smoky wood flavours, plums, even an espresso component. At the end, the palate is fresh and clean, leaving you wanting more. O: What an amazing difference an extra 4 hours in the decanted makes. If I didn't know better, I might not think this was the same wine. A fantastic depth of beautiful flavours. This isn't the most complex wine, so it could be faulted for being a bit too straight-forward and lacking in complexity, but perhaps it will improve with another few hours in the decanter. The structure and body is certainly there now. 92 points.
Decanted for 9 hours:
The concentration of the fruit just keeps increasing, but now there is a distinct gamey/meaty component to the wine. Really chewy, structured fruit. The sweetness has subsided a little, but the earthy components, as well as the lean, pure fruit, are really putting on a great show, strong and balanced. Finally, after 9 hours, a real kick of cassis that is just beautiful. A little dusty feel in the mouth, as there is some very fine sediment in the wine. The alcohol seems to also spike very slightly on the nose and the finish on the palate. Overall, this wine just keeps improving with air. 92-93 points.

Double decanted for 1.5 hours. Helped with opening up the wine and we would suggest to be careful with not shaking as it has a lot of fine sediment. Oh the nose on this wine. Secondary with lovely cedar and earth so beautiful and elegant, mouton level nose. On the palate (much like the Mouton 90 ironically) it has a thin mid palate almost thin but then (unlike the mouton) it tails off nicely with a very nice finish. A very very nice wine and feels as if its right to drink now. 92-93

Decanted 4 hours prior to beef tenderloin dinner. Garnet with a light rust hue to the color. Initial nose was very light, delicate, almost floral. My initial taste was characterized by light fruit - raspberry, cherry - delicate tannins and a moderate finish. Four hours later, this wine was gorgeous. The nose had opened up and was much more expressive. The wine was also displaying notes of dark fruit as well as light, some mild hints of cocoa, soft herbs and light minerality. 20 years of aging has relaxed the tannins. Overall, a wonderful wine.

Following harvest, the grapes for the 1990 Château Pavie were macerated and pumped-over in wooden vats for three weeks. After malolactic fermentation in barrels the wines was aged in new oak for 18 months. The eventual blend consisted of 60% Merlot, 30% Cabernet Franc and 10% Cabernet Sauvignon.
Still rich purple in colour with only the slightest hint of bricky-red at the edges, this Pavie shows aromas of earth, leather, flint and just a touch of black cherry. The palate is smooth and mouth filling. Oak and fruit have integrated beautifully to leave a suggestion of spice, melt in the mouth tannins and a beautiful long finish.

Dinner with the monthly group at Restaurant le Nicolas (Nicolas Restaurant, Keong Saik Street, Singapore): We decanted this for about half and hour. Pity – because the wine really opened up with another half and hour in the glass, by which time we down to the dregs. Nose was really nice from the get-go. Secondary aromas of toasty butternut and toffee along with tobacco, smoky roasted capsicums and an earthy, leather note that emerged with time. I picked up a streak of metallic, ferrous notes which surfaced at one point and submerged rather quickly. The palate was rather simpler than the nose at first. More toasty notes, with clearly mature flavours of tobacco leaf and roasted capsicums along with plush, softened tannins. It was all rather lacking though, especially on the woefully short finish. Thankfully, the wine really opened up with time – the nose began to show more smoky cigar and sous bois, and the palate went through quite a metamorphosis to show crystalline cherry fruit. The finish finally started lengthening out as well as I enjoyed my last quarter glass, with sweetly lingering notes of cherry and redcurrants. It was really enjoyable by this time.

Drunk at Lowell Lunch @ Hawksmoor- this was decanted for about 2 hours which seemed a good start but perhaps more even better. garnet like color and only slight lightening around edges. nose was at first spicy red nose and then some earthiness to it. in the mouth very complete, and balanced, not a bruiser but a full strong wine. good balance of fruit and the beginning of secondary flavors, i think this one is still on the upswing but not a crime to start drinking now. was nice to drink it next to its older brother from 1982

Interesting this wine initally had a hint of being corked ( the good news is it seemed like a lot of good wine in the bottle) as it warmed a little in the glass it quickly became obvious this was a bad bottle...oh well hopefully one of my other two will be good

Although mature, the bouquet and the taste are still youthful. The fruit is soft and ripe. The tannin is soft as well but still powerful. The oak is in perfect harmony in this full bodied complex wine with a long finish.

Somewhat average garnet color. With air, the nose reluctantly but pleasantly opened to show cherry, grape, cinnamon, mineral, tobacco, and a floral/soapy component. Subtle, with some complexity and reasonable length. Easy drinking, maybe too much so as this bottle did not have the structure I would have expected based on earlier tastings. At times, it was almost like drinking cherry Koolaid. Despite the hints of youthful fruit, I'd be inclined to keep drinking these up, as any gain in complexity from further aging may be offset by the loss of backbone. A very pleasant old Bordeaux that is best drunk with good food.

This is a step up. The last one of these from the same source took 8 hours in a cdecanter to open up (three years ago). The color was darker and younger than the 89. A bigger more muscular nose with black cherries and dark plums. A minerally smell with some vanilla and dark chocolaate. Very nice. The full bodied palate was better focused than the 89, with more mineral and structure. Black cherries and dark stone fruits. More chocolate. A well balanced wine with good grip and a long finish. At peak with minimum 5 years by my guess. 93 pts.

Just the beginning of browning on the edges suggestive of what this wine will become. At the core though, a dense Barolo-like, rich red that speaks very much to the present.
A slight sense of Beefeater Gin on the nose. Quite heady with Juniper, and tight tannins. The strength of this wine suggests a drinking window ten years ahead but only for the dedicated few who will give up the power of raw fruit for a more nuanced tasting experience.
On its own, the wine is a bit stringent and tight. With a table of food though, the wine melds easily and plays quiet conductor to the more showy dishes on the table. Be prepared to put your mind to work, cyphering what this wine is versus what you think it should be.

Q4 - 2016 Tasting - Anything Goes Theme (New York, NY): #3 of 22 wines tasted double blind. From looking and smelling, it was obvious we were back to the old world with glass three. Color was browning and a bit cloudy. The nose was a bit funky with earth and leather. Not a lot of fruit left on the palate but all those lovely tertiary flavors were showing up in full measure. Never had a Pavie before and from what I have read about about how big and modern they can be this really surprised me on reveal because this wine was very elegant. This was top second quartile for me, and second place overall for the group with 9 pennies voted

Q4 2016 Wine Club (The Apt): Wine #3: We clearly have some Bordeaux lovers in the group as this was one of the favorites. The age on it is clear and as another note mentioned it's prob time to start drinking up. Fruit mostly faded, but still has notes of soy sauce and leather. (9 pennies)

I like this better than the '90 Figeac. It hit its stride around the 20 min mark to deliver haunting aromas and flavors of cabernet franc. Deep, deep baked cherry, dried berry leaf, maduro tobacco and forest floor. Incredibly rich and structured.

From memory: Brought to a dinner party and served after an 89 Pontet Canet. My two previous bottles have been great, but this one sadly lacked the depth and complexity of the others. Granted it didn’t get the lengthy decant that has shown to benefit this wine on earlier occations, though in this case I think too much air only would have made things worse – this was probably just a tired bottle (the fill was OK, but the cork was a complete mess). By all means a nice drink, but not something you’re happy paying $150 for (89-90 points).

The cork is in excellent shape. The wine is deep red with no signs of browning. The nose was earthy with mushrooms and ripe currants. On the palate the wine showed many layers of flavors with superb balance and length on the palate. Consumed at dinner with friends. Decanted 1 hour before serving.

Very Smooth and intense st. Emilion.. The wine was tight and closed when opened and poured, but 1 hour in the glass really does it.. Very well intereated tannins, and yet a thickness that fills your mouth. This is a yummi wine that has the power for another 5 years. But if you like a power wine,, drink now, cause some of this might fade of with cellaring.. I have 5 left. I will look forward to the next bottle..

Decanted for close to five hours before tasting. Served after an 89 Gruaud Larose, and naturally benchmarked against it. Also showing classic aged Bordeaux characteristics, but is a little darker, a little fruitier and a little brawnier than the GL. Not quiet as elegant, but packing more of a punch. As others have pointed out before, this wine benefits greatly from air exposure. It’s astonishing how much weight and depth it gained during the course of the evening. While the first glass had problems competing with the GL (91p), the last glass was nothing short of exceptional (95p).

C: Brownish red, brick-red at the edges. Quite a light colour.
N: Relatively sweet fruit, red berries, smoke, earthy tones in the background, definite tobacco, almost menthol cigarettes. Herbal.
P: Light on the attack, the red fruit/berry component builds through the mid-palate and the smokey, oaky tannins take over for the marathon finish. Surprisingly thin and one-dimensional for this calibre/price. Very smokey. Still very dry tannins, but they're quite gentle and certainly not overly harsh. Develops leather notes with a lot of air. The finish lasts for ages, with smoke and gravel.
O: A dull effort for a wine of this price. Perhaps not the greatest bottle, as the fruit just wasn't there on the palate. Clean, smooth, long and balanced, but overly smoky and ultimately slightly too boring. 85-86 points
Decanted for 7 hours:
C: The colour seems brighter and healthier.
N: Similar nose with a heavier concentration of fruit.
P: Powerful, concentrated, pure fruit (plums with thick healthy skins) from the start. The fruit is embellished by thick, sweet vanilla and a great depth of flavour and good weight on the palate. Also some herbal notes and freshly fallen pine needles. The mid-palate is smoky, but not overpowering. The tannins are grippy, but not aggressive at all. Rounded, gentle, dry tannins. The finnish is fantastically long with a bit of alcoholic heat, grippy tannins, smoky wood flavours, plums, even an espresso component. At the end, the palate is fresh and clean, leaving you wanting more.
O: What an amazing difference an extra 4 hours in the decanted makes. If I didn't know better, I might not think this was the same wine. A fantastic depth of beautiful flavours. This isn't the most complex wine, so it could be faulted for being a bit too straight-forward and lacking in complexity, but perhaps it will improve with another few hours in the decanter. The structure and body is certainly there now. 92 points.
Decanted for 9 hours:
The concentration of the fruit just keeps increasing, but now there is a distinct gamey/meaty component to the wine. Really chewy, structured fruit. The sweetness has subsided a little, but the earthy components, as well as the lean, pure fruit, are really putting on a great show, strong and balanced. Finally, after 9 hours, a real kick of cassis that is just beautiful. A little dusty feel in the mouth, as there is some very fine sediment in the wine. The alcohol seems to also spike very slightly on the nose and the finish on the palate. Overall, this wine just keeps improving with air. 92-93 points.

Oh the nose on this wine. Secondary with lovely cedar and earth so beautiful and elegant, mouton level nose. On the palate (much like the Mouton 90 ironically) it has a thin mid palate almost thin but then (unlike the mouton) it tails off nicely with a very nice finish. A very very nice wine and feels as if its right to drink now. 92-93

Decanted 4 hours prior to beef tenderloin dinner. Garnet with a light rust hue to the color. Initial nose was very light, delicate, almost floral. My initial taste was characterized by light fruit - raspberry, cherry - delicate tannins and a moderate finish. Four hours later, this wine was gorgeous. The nose had opened up and was much more expressive. The wine was also displaying notes of dark fruit as well as light, some mild hints of cocoa, soft herbs and light minerality. 20 years of aging has relaxed the tannins. Overall, a wonderful wine.

Following harvest, the grapes for the 1990 Château Pavie were macerated and pumped-over in wooden vats for three weeks. After malolactic fermentation in barrels the wines was aged in new oak for 18 months. The eventual blend consisted of 60% Merlot, 30% Cabernet Franc and 10% Cabernet Sauvignon.
Still rich purple in colour with only the slightest hint of bricky-red at the edges, this Pavie shows aromas of earth, leather, flint and just a touch of black cherry. The palate is smooth and mouth filling. Oak and fruit have integrated beautifully to leave a suggestion of spice, melt in the mouth tannins and a beautiful long finish.

Dinner with the monthly group at Restaurant le Nicolas (Nicolas Restaurant, Keong Saik Street, Singapore): We decanted this for about half and hour. Pity – because the wine really opened up with another half and hour in the glass, by which time we down to the dregs. Nose was really nice from the get-go. Secondary aromas of toasty butternut and toffee along with tobacco, smoky roasted capsicums and an earthy, leather note that emerged with time. I picked up a streak of metallic, ferrous notes which surfaced at one point and submerged rather quickly. The palate was rather simpler than the nose at first. More toasty notes, with clearly mature flavours of tobacco leaf and roasted capsicums along with plush, softened tannins. It was all rather lacking though, especially on the woefully short finish. Thankfully, the wine really opened up with time – the nose began to show more smoky cigar and sous bois, and the palate went through quite a metamorphosis to show crystalline cherry fruit. The finish finally started lengthening out as well as I enjoyed my last quarter glass, with sweetly lingering notes of cherry and redcurrants. It was really enjoyable by this time.

Drunk at Lowell Lunch @ Hawksmoor- this was decanted for about 2 hours which seemed a good start but perhaps more even better. garnet like color and only slight lightening around edges. nose was at first spicy red nose and then some earthiness to it. in the mouth very complete, and balanced, not a bruiser but a full strong wine. good balance of fruit and the beginning of secondary flavors, i think this one is still on the upswing but not a crime to start drinking now. was nice to drink it next to its older brother from 1982

Although mature, the bouquet and the taste are still youthful. The fruit is soft and ripe. The tannin is soft as well but still powerful. The oak is in perfect harmony in this full bodied complex wine with a long finish.

Somewhat average garnet color. With air, the nose reluctantly but pleasantly opened to show cherry, grape, cinnamon, mineral, tobacco, and a floral/soapy component. Subtle, with some complexity and reasonable length. Easy drinking, maybe too much so as this bottle did not have the structure I would have expected based on earlier tastings. At times, it was almost like drinking cherry Koolaid. Despite the hints of youthful fruit, I'd be inclined to keep drinking these up, as any gain in complexity from further aging may be offset by the loss of backbone. A very pleasant old Bordeaux that is best drunk with good food.

This is a step up. The last one of these from the same source took 8 hours in a cdecanter to open up (three years ago).
The color was darker and younger than the 89. A bigger more muscular nose with black cherries and dark plums. A minerally smell with some vanilla and dark chocolaate. Very nice.
The full bodied palate was better focused than the 89, with more mineral and structure. Black cherries and dark stone fruits. More chocolate. A well balanced wine with good grip and a long finish. At peak with minimum 5 years by my guess. 93 pts.
