Slowly declining but still a solid Chablis. This vintage has been fantastic and the fact that there is no oxidation is great news. The wine has not changed much since I had it last. Only slightly less aromatic. Lovely bottle. I would drink on the short term.

Very good, and enjoyable Chablis. Good color, very clear and pale. Nice aromatics, iodine, saline, hints of lemon zest. Very focused on the palate, lemon, hints of grapefruit with vibrant acidity. Long mineral finish. Still quite tightly wound, and primary with not much hint of the secondary notes you can get with aged Chablis. Impressive.

For the past decade or so, aging white Burgundy has been like Russian roulette. More than one out of five bottles have been oxidized. Most of the time, prematurely. This was not the case. This was still a pale lemon color, with an utterly clean nose of medium plus intensity. Notes of pear, gooseberry, Meyer lemon, light cedar, hay and honey. On the palate it is dry, full bodied (it has gained some weight with time), medium plus acidity, medium alcohol and medium plus intensity. The citrus and honey notes are the most prominent on the palate and the mouthfeel is lush and royal. It's punching above its weight for sure. The finish is of medium length and leaves you longing for more. I wish all white Burgundy would age this way. I miss those days.

More power here than in both the Mont de Milieu and MdT 2010. Open and forward style. Impressive, but not the structure and minerality of the MdT 2010.
Best of the three over three years.. Just delicious--opened and more expressive after about 30 minutes, slightly cooler then cellar but not fridge temps. Well balanced, quite long across the palate. Lemon, lime, chalk, delightful herbal notes of evolving flavors and nose. Rich suppleness layered with fruit, minerality, acidity. Fabulous with soft shelled crab, sea scallops, herb aioli, garden greens, over spinach pasta.

Tasted over 3 hrs -remarkably young looking translucent pale yellow-green -mild reduction ripe but not tropical -med acidity, middle weight round just about perfect ripeness with balanced minerality taut energy, still a little bit of saline and citrus with early waxy maturity hints creeping in, very good length -exquisite balance, classic Chablis character, this is drinking beautifully now and still seems young!

Pale gold, with a pale shade of hay at the rim. A little muted on opening. Unripe guava at first, paired with notes of oyster shells and green apple. With some additional air, elegant notes of lemon peel and sugared lemon tea. The mineral notes become more and more dominant with time, but w/o appearing too acidic for example. Subtle notes of citrus and Granny-Smith-Apples on the palate, with chalky notes. Again, oyster shells. Beautiful balance. A long finish which is mainly accompanied by the elegant, mineral impression.

Served with fried soft shelled crabs, linguini, herb aioli. Muted on opening, a bit too cold and needed air time. Decanted, and over course of dinner grew to be delicious. Citrus, lemon but neither aged nor brightly acidic, rather lovely presence, some softer yellow fruit, fragrant light herbal notes, mineral, classic bit of chalk/seashell. Palate gained length and a subtle, more round quality while remaining clean and balanced. All in all fine interwoven tapestry of flavors--was glad there was a third of the bottle to enjoy after finishing the food.

Medium pale to medium yellow with a slight greenish tinge - a very saline, seashore aroma, with just-ripe apple lurking behind - palate is awesome, with exc acidity, but broad, deep flavours and a long finish - never approaches "fruity", but it isn't austere either - really textbook Chablis, youthful, delicious, winey, whole, balanced, long - yeah, really good!

This Fourchaume is a nice Chablis and is much more ready to drink than other Fevre bottlings like the 2010 Les Clos. It is a little bit muted on the nose, but the palate has a wonderful vibrant tension with flavors of limestone, grapefruit, white peach, sea salt, and crushed rocks. Overall this has strong acidity and a slight bitterness that helps keep everything in check. This will improve some, but is already a pleasing bottle. A solid value at roughly $35 per bottle.

Crushed stone, sea air and citrus nose. Delightful blend of citrus, white peach, minerals and the slightest hint of creme brûlée in a long finish. Plump, at least in the context of Chablis, but it is nicely balanced by a steely acidity. Much more approachable at this point than the Vaillons which we tried a couple of months ago. An outstanding effort.

Nose is an opulent mix of white grapefruit, lime pith,, with an undertone of saline.
In the mouth, its bright, tart, white peach, lime. The mid palate is pleasant, astringent with minerality, a long drying finish, with a hint of bitterness.
Perhaps a bit young, and would benefit from another year in cellar to show at its best.
Chablis - its not CA chardonnay...

Visiting Domaine William Fèvre (Chablis, Burgundy, France): Moving to the right bank - compared to Beauroy and Les Lys, this is obviously from a warmer climat. Much more aromatic, giving and expressive on the nose, with warmer fruits. Already quite approachable, round and powerful on the palate, with proper acidity. Nice.

This Fourchaume is a nice Chablis and is much more ready to drink than other Fevre bottlings like the 2010 Les Clos. It is a little bit muted on the nose, but the palate has a wonderful vibrant tension with flavors of limestone, grapefruit, white peach, sea salt, and crushed rocks. Overall this has strong acidity and a slight bitterness that helps keep everything in check. This will improve some, but is already a pleasing bottle. A solid value at roughly $35 per bottle.

Crushed stone, sea air and citrus nose. Delightful blend of citrus, white peach, minerals and the slightest hint of creme brûlée in a long finish. Plump, at least in the context of Chablis, but it is nicely balanced by a steely acidity. Much more approachable at this point than the Vaillons which we tried a couple of months ago. An outstanding effort.

Nose is an opulent mix of white grapefruit, lime pith,, with an undertone of saline.
In the mouth, its bright, tart, white peach, lime. The mid palate is pleasant, astringent with minerality, a long drying finish, with a hint of bitterness.
Perhaps a bit young, and would benefit from another year in cellar to show at its best.
Chablis - its not CA chardonnay...

Much more aromatic, giving and expressive on the nose, with warmer fruits. Already quite approachable, round and powerful on the palate, with proper acidity. Nice.
