At this stage, needs a lot of air - perhaps no harm in decanting. Had this open in bottle about 3hrs before the first pour/taste. This is archetypal Chablis in a classic vintage - it has incredible cut and length. Flavors and aromas of seaspray, oyster shell, crushed wet rocks, seaweed, green apple, citrus peel, citrus oil. Linear and focused, chalky midpalate. With more air the midpalate starts to flesh out and gain weight. It's a nice preview but will need another 5+ years to really hit it's stride.

Light golden - is there a hint of green? Saline, ocean breeze influenced nose has some yellow fruit - not overpowering, but pure. The Raveneau depth presents itself more on the palate which leans towards richness yet is restrained by the vintage. More linear than many wines I have drunk from Raveneau. Very good, indeed. But not magic. (91)

This might have been the best Chablis I have ever had in my life. Brought by a friend to our Burgundy dinner where I was the only newbie. So chalky and mineral on the nose. Lemon zesty on the palate. But I never knew a Chablis could be so creamy and silky. A real treat and great with Branzino starter

Very pretty wine. In an excellent place right now. Like most Raveneau improved massively 1hr after being opened. Texturally superb wine with very food friendly acid and balance. Cant see this improving. Drink up. 17.5

Popped and poured. Medium yellow. Very airy lemon infused nose, with a bit of truffle and iodine. Lovely A+ texture, crisp yet has a silky almost creamy and broth-like feel. Moderate acidity. Bitter lemon rind element on the finish.

Tasted next to 2011 Droin GC Les Clos. Good fruit on the nose, mix of stone and citrus fruit, oatmeal, minerality, herbs. On the palate quite compact and firm, great acidity, mineral and very vibrant. Lovely length. Excellent. Drink or keep. 92-94

Medium yellow. Primordial smells of sulfur and iodine; while it may sound strange, it reminded me of walking into the caldera of an active volcano. Fantastic texture that is uniquely Raveneau. Brothy and dry papaya with average acidity but strong soil tones. Just about fully mature and unmistakably Chablis. Excellent, no weird green 2011 tones.

Tasted next to 2011 Fevre GC Les Preuses. More backward and really quite tight at first with lots of depth and intensity. White and yellow stone fruit, crushed stones, cold cream, flowers on the nose. Vibrant and powerful in the palate, very precise with lovely length. Drink or keep. 92-93+

Nice. Classic nose of seashells, salty air, and touch of Rav funk. On the palate it is a bit quiet at first but after about 25 min open shows more lemon citrus, minerality. Quite good in medium weight with vibrancy. Not a top vintage and lacking in the mid-palate but will be very good from now on I think.

Dinner at Formento's (Chicago, IL): The nose on this was classic Raveneau, with a light bit of salinity, as well as some tart citrus. The palate was initially tight, and needed more air to flesh out, whereupon the minerality became much more apparent. I've been a little down on the wines of Raveneau lately -- while they're clearly good, they are a little rounder and fleshier than the Chablis archetype I keep in my head. There always tends to be a touch of sweetness or caramel that distracts me more than it ought to. In any case, this didn't show too much of that character; there was a good squeeze of lemon with the fuller texture here.

This was pretty darn closed for business. Muted nose, unforgiving on the palate, and a twinge of bitterness. With some vigorous swirling over a couple hours, a little bit of the nice Raveneau density and musk showed up, but just a tease. No better on day two. Would tuck these away for a while.

Very light yellow; nose somewhat muted, hint of licorice root, rounded; smooth and silky, some brioche and honey; delicious but straightforward with limited complexity

Bright, light yellow. A feminine, floral nose also yields notes of white pepper and lemon zest. On the palate, citrus and honey, but lacking concentration. Great acidity. The finish is subtle but persistent. This isn't in a great place; I'd give it a few years before trying again.

The Raveneau 11's show some greener elements and this is no exception. It smells of gin botanicals. There is plenty of citrus and the wine has good depth and volume but it needs a bit of time to even out a little.

Decanted and poured, this wine gave an excellent showing with detailed aromatics and an expressive, textured palate. The bouquet shows defined oyster shell, salinity, lemon zest, floral notes, chalk and slate notes. The color is a vibrant light yellow. The light / medium bodied palate shows balance and poise. The palate shows a fine grain texture with slate and chalk elements. The wines finish with a youthful fruit / acidity balance with medium to long length. This drinks well now with decanting and should benefit from an additional year or two of bottle age.

Decanted and poured, this wine gave an excellent showing. The bouquet shows subtle oyster shell and limestone notes combined with lemon zest and floral elements. The aromatics do suggest some richness and the light to medium weight palates confirms this impression. The color is a vibrant and youthful light yellow. The palates shows excellent overall balance and very lengthy finish that shows acidity, citrus and limestone elements. This wine drinks well now with decanting and improved with airing.

I continue to be baffled by Chablis. This is concentrated, clean, direct, but as for a descriptor all I can say is "tastes like white wine". At least it's not sulphury.

Survey of 2011 Dauvissat and Raveneau Premier and Grand Crus (San Francisco): Deep yellow. Floral and somewhat reduced nose. Lighter feel. Herbs and orange, iodine-terrific complexity, great minerality. Despite the whiff of sulfur, this ran circles around the Dauvissat-Camus Vaillons tonight.

Decanted and poured, this wine remains youthful and somewhat reserved. This bottle did benefit from airing and became more expressive over time.
