Thanks to CHBeaumont for the spot-on review below. Tried first at cold cellar temp and it was a bit tired and flabby. After short stint of freezer chilling & some air it smelled/tasted a lot fresher. Open buttery nose, beautiful palate with touch of honey'd lime. +1 hour really put on depth and went from citrus to nuttiness. Agree this is a great time to pop the corks on this. A great wine to celebrate impeachment #2 with.

Pale buttercup; classic bouquet, subtle, shows attractive bottle age; superb palate, vague tropical hint, sea-shells. Lingering finish. This is best served on cold side. After 90 minutes this went into decline. Drink up.

Light yellow. Very brothy, saline nose. Medium body, lime fruit, terrific acidity and salinity. This has the structure to stand up to the richness of the vintage. An outstanding bottle drinking perfectly.

Sushi Dinner with 2000 and 2002 Premier and Grand Cru Chablis: Significant dose of sulfur which renders it slightly bitter on the end. Lean and one of the least texturally pleasing wines tonight, but it does become richer and more pleasing as it opens. Not the best example of this based on one previous experience but still quite good.

Light tulip colored. The combination of the natural linear stoniness of Sechet and the richness of 2002 resulted in a great amalgamation here. Lemon drop, flowers, terrific acidity, and an extra layer of sap and flavor. Pure, youthful, wonderful Chablis.

Small faraway barnyard nose that fades; mouth penetrating medieval green herbal liquor remedy and ginger biscuit in addition to expected flint/mineral with concentrated carbon finish; not a lighthearted or refreshing wine, quite serious.

Dinner Eric Mao Chris and gang -- Wow, showing spectacularly. Oyster shell, spearmint-honeyed minerals. Gorgeous light gold color, fresh and beautiful yet starting to pick up some nuance of development. Crushed frozen stone, chamomile, lanolin, warm cotton. Almond/argan oil, hazelnut/macadamia nut, antique books and cinnamon. Inspiring wine!

This was rather reticent. Some seashell and mineral, light fruit. We'll see how the half I transferred to a 375 fares in the fridge for a week. For now, B-

An initial burst of sulfur mostly blew off after a few minutes in the glass. Lemon fruit, chalk or perhaps flint penetrated the steely crisp mouthfeel. Very high acid on the finish. This is a baby that would be tempered with food, but I think will round out a bit over the next 5-10 years.
