Delicious. Paired with beef tenderloin and trimmings on Easter Saturday and it was well received by the family. Decanted it for an about 80 mins, which did allow it to open, but it was drinking well as soon as we poured it in the decanter. Rich and full-bodied, there is lots of dark fruit and spice here, and the tannins have softened nicely. My guess is the oak might integrate a little more with some added age, but regardless it's gorgeous now and has lots of life ahead of it.

Showing some aging with slight bricking around edges. Decanted and still needed time after an hour. Strong notes of rose on nose. Classic tobacco and cedar palate, very elegant.
Have another bottle. Definitely some legs on this and will be great to come back to in a couple years. Lively wine.

Jammy ripe black fruits, grilled jalapeno, oak, high alcohol high tannins med acidity, palate brings it down to earth (organic + inorganic), hint of brett. Good balance. Showed the best on 3rd day. I suspect this has a decade ahead of it.

The appearance is clear and medium ruby in colour.
The nose is clean with medium(+) intensity. There are primary aromas of red fruit (ripe red plum, wild strawberry, raspberry), black fruit (wild blackberry, bramble), secondary aromas of oak (cedar, toast, dark chocolate, smoke), and tertiary aromas of bottle age (old leather, earth). This wine is developing.
On the palate, the wine is dry with medium(+) acidity, medium tannins, high alcohol, and medium(+) body. The flavour intensity is medium(+) with primary notes of red fruit (ripe red plum, raspberry, wild strawberry), black fruit (wild blackberry, blackcurrant, bramble), secondary notes of oak (cedar, toast, smoke, charred wood, dark chocolate), and tertiary notes of bottle age (old leather, dry dusty earth, hint of mushroom on the finish). The finish has a long length.
This is a very good quality wine; can drink now, but has potential for further ageing.

Airoldi Fine Wines Winter Tasting (Oak Barrel, Elizabeth Street, Sydney): Medium minus intensity aromas of plums, chocolate, sweet spice, cream. Concentrated, dense and slightly leathery fruit on the palate with silky, persistent tannins carrying all on a long finish. Nice but not for me.

A little closed at first, even after a hours decant. Good structure - firm but softening tannins suggest this has many years left. Lovely front and middle and just a little bitter chocolate on the finish. Delicious.

A pretty and lighter wine (within broader Chateau Canon GC vertical) but still pleasant. Dark fruit but breezy and violets. As said...pretty and pleasant.

Deep ruby. Strong nose of ripe black and blue berries, sweet spices, licorice, some musk, oak. Medium body and adequate acidity, noticeable ripe chewy tannin. Blackberry, earthy, leather, prune, licorice. Reasonably concentrate and long. Quite musculine style but approvchable now.

(Decanter Fine Wine Encounter 2015) :: Floral bouquet, quite tight / bunched at the moment, showing the occasional waft of underbrush and soil. Fairly 1D on the nose, though pronounced fruit and freshness on the palate.

Bordeaux Confidential USA, nose of dark fruit, touch of heat, more of the same on the palate, tasty rich fruit but simple, medium body, a definite step down, medium finish.

Bordeaux Confidential SF (SF): (2nd wine of Ch. Canon) Nose: A bit of cheese rind. Ripe merlot fruit - warm, plummy, slightly on the reductive side. A bit overripe. In the mouth: Super ripe. Elevated alcohol, elevated acidity. It’s ripe, luscious, and the tannins are soft. Score: Around 8.5

Good with steak pie. Still very firm tannins suggest there’s no rush to drink this.

Yummy bouquet and nice, round, lush, intense, sweet palate. Still holding up well but ready to drink upon opening. Easy, enjoyable, well crafted wine.
