This needs a few minutes in the glass to open up. Notes of lime, quince, some slightly peppery notes too, there are also some notes of wet stone, lemon seed and a touch smoky minerality too. It‘s lighter-medium bodied, has high acidity and good persistence. Medium-long finish with plenty of tension. Another winner from Falkenstein.

Good - but a little pricey for how it's drinking now. A little tangy as others have pointed out. Not a lot of complexity but well built. Pairs well with food. Agree that a touch of RS would be nice to balance out the acidity. I bet this will be better in 5 years.

Wet cork, but it was fine. Has a classic mosel nose of wet stones, talc and white peaches. More floral and herbal nuances with time. Jasmine and elderflower cordial. Strong, strong limey acidity on the palate. Palpable rainwater minerality. Slight pétillance. Huge tangy length, the acidity is nearly overpowering but I like it. Not overly sour, just tangy and sharp. Very food friendly. Yum.

Barolo, Beaujolais, and randoms (Flatiron, SF): 11% Pale straw with hints of green. Modest petrol, ripe lime and lean lemon. Slightly corked - wet cardboard. Slight RS - feels 3-5g/L. Light body, 11% alcohol, high acid - both tartaric and long mineral malic.
A satisfying relatively dry wine - might blind as Alsace AOP basic, but it's cooler climate.

Open 24+ hrs. Light and beautiful nose - airy, sharp (in a good way), slate and crushed stones, cumin, white flowers, hint of mint and green herbs, lime peel, white grapefruit, a touch of pepper. The palate has softened a bit from yesterday - still quite austere ... to me this needs a touch of RS. It's got a lot of dusty minerals and slate, lime and grapefruit pith on the entry, then lime, slate and minerals. Very light and linear and focused, a bit wicked. The finish shows the lime and slate and minerals - the latter two grow until the finish is almost salty. Good, but I much prefer the wines from the Feinherb level on up. Nose - 5/6, Palate - 5/6, Finish - 4.5-5/6, Je ne Sais Quoi - 1/2 = 15.5-16/20.

Needed much more time, I suspect; extremely dry, but also extremely high acidity, and I like high acidity. Let it sit for a while longer.
