We consumed this over an extended period of time, nearly a month and a half for the 750ml bottle, which sat open in the fridge the entire time. Strangely enough, the wine get better the longer it sat open in the fridge. Not a super mind blowing Sauternes but all around good for the money to keep in the fridge for an everyday sipper.

This has been open in my fridge for about two weeks now, and I have been checking back with it every few days to see how it is holding up. For the first week or so I saw very little change with its lemon oil, pineapple, and a stony minerality, that I was shocked to get in a Sauternes. Lusciously smooth and decadent, but not in the elegant way you typically find in good Sauternes. It was a bit clumsy. Checked back to it last night and it had made a huge improvement. The strange mineral flavors were gone and what was left was soft apricot, honey, pineapple, and an underlying sweet cinnamon. This was more what I would expect. Still pretty basic in comparison to others that I have had, but give time to really get the air into it, it showed quite well.

A little high on the acid and a nice mild boytritis flavor but nothing special. Would like to know exactly where in Sauternes the grapes were from given the retailer's hype.

This wine may be way too young to be consume right now but this bottle pales in comparison to other 2005 Sauterns I recently tasted. It light and citrus not the usual apricot and honey that you expect from a lot of Sauterns. Pineapple and lilac dominate the nose with hints of lemon peel. Light and crisp in the mouth and not at all light Sauterns. More pineapple and some hints of apricot, mango and limestone. Finishes hot and dry with hints of grapefruit.
Not a bad buy at $25 for a full 750ml given so many 2005 Sauternes start at $30 for a 375ml. This wine will probably age well and ultimately prove to be a bargain but there are so many better drinks within a few years reach.
