My last bottle, and I did not heed my own previous note about giving this more time. And maybe that was for the best, as this bottle was beginning to show hints of oxidation at the edges. Aside from that, it was drinking well and in line with other recent notes.

Light hay in color, subtle but enticing nose, the palate is crisp, fresh, medium intensity fruit, hints of saline, lemon citrus, minerality. Has a lot of Chablis character, but uniquely not Chablis. Very youthful, quite delicious, a lovely, fresh white wine at this point, with years ahead of it.

Fresh, light yellow. Lemon, salt, ginger and candle wax. This drinks very young at 7+ years and I think it will improve. Needs a decant now. Excellent.
On second day it is even more clear how young this is. This is excellent wine with a long life ahead. Hold other bottles for at least 2-3 years or more.

The aromas are beginning to show some development here, with the citrus, honey, and floral qualities becoming more expressive. The palate has rounded out a bit as well, though it still has a bright acidic core. I still have not run into an oxidized bottle of the 2016, though I am tempting fate by writing that here, I'm sure. I'm rolling the dice on letting my final bottle rest in the cellar for a little longer still.

PnP. Light greenish gold. Herbal and saline notes on the nose. Interesting textures on the palate with a roundness followed by sharp acidity. Herbal notes on the finish. Complex and interesting as I usually find Etna Carricante. Definitely improves with air. Could develop more interest with age but not sure.

A good wine. QPR isn't great though. I enjoyed with Salmon dish. The wine had some weight to it, nice density of fruit, the slight black pepper note on the finish was interesting. I enjoyed the wine.

Second bottle of this and I liked it very much; more than I remember liking the first bottle; very fresh nose with lemon peel, crushed rock, some hints of basil and parsley, floral notes, maybe a tinge of green apple; super vibrant and full of energy, but with plenty of flavor intensity that leads to a lingering mineral driven finish. Served it with pesto crusted halibut which worked really well. I don't have a lot of experience with carricante, but I love the high acidity. That said I'm not sure its worth the price tag; will try to explore some other carricante if I can find them for less.

A bit disappointed here and from my perspective doesn’t live up to the hype or price. On day one as regards the nose, our dinner group detected the lemon verbena and petrol notes. The palate was medium high in acid, non-descript with slight volcanic minerality. We were enjoying a variety of other outstanding wines that night and this carricante wound up in my refrigerator almost untouched 7/8ths full. I revisited it a day and a half later but it really hasn’t changed. A somewhat mundane sip that might work chasing an appetizer of oysters on the half shell. But so would a decent muscadet or dozens of other bottles that are available for less than 1/3rd the cost.

Pale gold. Nose is restrained, honeysuckle and some vanilla. On the palate dry medium acidity medium body. Bread, whey, fresh cut grass, some vanilla and cinnamon notes on a long finish. Very good wine, but I was hoping for more. Definitely a wine which demands food. The right meal - baked cod, or mussels? would probably bump it up a few points.

PnP. Clear greenish gold. Rather closed on the nose with herbs and citrus poking through with much swirling. Initially on the palate this is thin and acidic but it puts on much more depth and rounds out nicely with air. Waxy and citrus on the palate. Seems like an infant but I don't know how well Carricante from Etna ages.

Backup bottle for the corked ‘17 Terre Nere Aetna Bianco Caldera Sottana. The nose really takes some coaxing; mostly mineral, with some white fruit, flowers and citrus. Those scents amplify in the palate, and crescendo into a long, tingly acid finish. Great food wine, great wine for our first warm weekend of the year, and an all around nice bottle of Carricante.

Pale straw. The aromas are much more expressive than my previous bottle two years ago. Citrus and yellow apple, along with a prominent earthy mineral note. Finally starting to show some character. The palate has also opened up, with fuller fruit expression to go with the still-bracing acidity. The long finish suggests good material for further development. Impressive showing.

Nose has that waxy lemon note that seems characteristic. There's a darker note that I can't put my finger on but it keeps bringing me back. Palate is full, rich, waxy lemon compote, high acidity, long lingering but clean finish that makes me take another sip.
6 years seems to be a sweet spot for these wines. Nice. Would buy again.

Very good wine and major step up from the 2014. Hard to describe beyond saying that the flavors are vibrant, yet the girth is almost chardonnay-ish. Hard to wrap my head around other than to say I like it a lot.

Pop and pour. Refrigerated half of the bottle under Vacu-vin. Opened this after a corked 2016 Burlotto Freisa.
Light Golden color. Nose of lemon and lanolin. Lemon oil on the intro with a salty sea spray finish. Texture is like a homeopathic tincture - oily mouth feel cut by the lemon tinged acidity. Tasted the following day. Shows an apple cider/apple peel note along with a salty lemon side. Still has the lanolin mouthfeel.

Not sure what is different about this bottle vs the 1st one, but I enjoyed this much more than the 1st. Aromas of lemon, flowers, minerals, salinity, herbs and slightly grassy. Flavors of lemon, minerals, salinity and herbs. Good acids. A really nicely balanced finish. Enjoyed a lot.

Opened for my wife to enjoy with friends but poured a few small sips; the nose really pops with saline, minerals and freshly cut lemon; the palate has intensified in flavor over the past couple of months but is still rather simple showing freshly squeezed lemon and a splash of ocean water; better than I recalled; firm acid tinge on the back end; maybe hold for a little while longer

Salt and wet stone as noted below… and maybe a hint of stale, warm bath water? Rounded out a bit as it warmed up, adding some nuttiness, but overall I found this pretty unremarkable… and I’m usually obsessed with mineral-driven whites.
Full disclosure: opened ~3 days after flying 5 hours with it. Certainly not a fair contest, but this has lowered my expectations for my second bottle.

Opened and let sit without the cork for 2 hours. Served slightly chilled and allowed to warm up. Tasted blind in a flight of 3 whites from Mount Etna, followed by three reds from Mount Etna. Light straw color. Nose offers slight saline and wet stone note and light white floral and lemon verbena element. Good salinity on the intro, with a bright tart citrus element and almond skin. Improved as it warmed up, yet still light in flavor.

Tasted at a wine luncheon at the Ft Worth City Club on April 30, 2021. Lunch was 2 sparklers, 4 whites, 4 reds, and a dessert wine. All wines were served blind. ---- This was white wine number 1. Very light, crisp, acidic. Served with the scallops, this wine brought an herbal character to the table when tasted with the scallops. This wine finished quite crisp. Not sure if there was really any oak in this one or not. I guessed this was a French White.

there is a richer/rounder/fleshier characteristic than what I normally expect form this grape/I vignieri whites. less of the herbaceous/lemony/slight bitterness, more fruit. but nonetheless a very delicious bottle. happy to have a few and will age the rest for a while

Really interesting and delicious wine. Not familiar with this varietal previously, but it’s Rhys so I jumped in. This is gorgeous. Someone else described it as the best of a Riesling and a flinty Chablis. Totally agree. A touch of gun metal flint, a bit of petrol, and the big white flowers my wife said reminded her of Gardinias. Great acids. Lemon curd. Paired well with Sushi of all things. Great stuff.

The 2016 Aeris Etna Bianco Superiore has mellowed out a lot since I last had a bottle 10 months ago. The color is still straw gold, but the nose now is evocative of a Chablis -- Gun flint, lemon, and sea salt. On the palate you have a wine that is built to age with tremendous structure and mouthwatering acidity.
This paired really well with spicy food. For those that haven't had Carricante grape, I typically find they are like combining the best qualities of Riesling and Chardonnay.
Looking forward to seeing how this evolves further.

This was slightly muted on the nose with some lemon, saline notes, and a hint of orchard fruit. Much more going on on the palate with nice acidity, lemon, minerals, salt, a hint of green apples, and hay. Nice, long finish. A very good wine, but I think this needs quite a bit of time and I hope the nose gains depth. 92+

Sunday hangout (socially distanced) (Chicago, IL): Served double blind. A mild smidgen of green on the nose. On the palate, this is a simplistic, slightly watery wine that seems great for the summer. Easy to drink but hardly complex. There was a slight leesiness that made me call this Muscadet. I mentioned to someone that I'd pay $20-25 for it. Whoops.

Bright lemon with a sweet floral/herbal note like walking through a field of wildflowers and an edge of minerality almost leaning towards crushed seashells - with air the lemon softened with a waxy quality. Very linear with lively acidity. This wine needs time, but the quality is obvious. Definitely more complex and complete than the 2014 and 2015 vintages (not to say that they weren't delicious in their own right.)

Pale straw. Decanted and consumed over an evening. The aromas are reticent and never really open up. Some sea breeze and citrus, but you really have to work for it. The palate is linear and firm, with impressive depth of extract while still remaining light on its feet. There is a strong core of acidity that gives this quite an edge. The wine feels embryonic to me and needs cellar time. No sign of the oxidation concerns that the '14 showed.

Opened and served with a Halibut fillet seasoned with a spicy lime sauce. Nothing wrong with this wine but I really am having a hard time convincing myself this wine is special and worth the price. I'm sitting on a 2014 for a couple more years to see how these age and if fireworks result. Have yet to experience fireworks.

I'm not sure if I've ever had carricante before; decided to try this as I read some interesting things about it and I've generally been impressed with the quality of Rhys. This was really quite good and interesting. The nose is very lemony with zest and juice notes, followed by an interesting aromatic herb note and a saline hint. It is intriguing to smell and certainly different which I enjoyed. The palate is fresh and bright with good concentration and a finishing saline note that makes it quite tasty. Will be interested to follow these and try some more in the future.

Decanted for 1h. Nice aromas of lemon, flowesr, minerals, herbs and a hint of grass. A linear palate with lemon, minerals, and herbs. Excellent acids. As the wine warms, a waxy texture emerges that adds some complexity. Young but really interested to see what the wine will be at year 5 or even at 10 yrs old. Liked this a bit more than the 2014 version. 90+

The 2016 Aeris Carricante is straw gold in color and features a nose of lemon, stone fruit, and salt that could easily be mistaken for a young California Chardonnay. A waxy texture, good structure, and imposing tannins that need a few more years to soften. But, at this stage at least, the balance is off with a mouth-puckering sourness that overwhelms all other flavors. It could be the age, but this is also missing a little bit of the depth that the 2014 featured.

Rhys @ My Place--Part 4 (My House): Bottle was opened yesterday for our Rhys event. Retasting 24 hrs later, the structure and acidity here is noticeable. The tannin and the acids are present, coming through as a mix of mineral and citrus. There is some stone fruit buried here, like a tangy nectarine, along with some saline. A wine that makes me think, and one I'd be curious to try again in a year to see how it is knitting together.
This is a collaboration with Rhys, though this is an entirely Italian wine. Lemon pulp and peach skin mingle with subdued floral notes and crabapple. Very supple and complex, not a typical one-dimensional random white wine. This one is special. Needs some time to open up, maybe 30-45 minutes, and also does well if slightly chilled.

Vibrant lemon citrus with mineral and wax on the refreshing palate with prominent acidity on the moderate finish.

It could be the age, but this is also missing a little bit of the depth that the 2014 featured.

somewhat criminal to open already but had to try. Very closed, though hints of what is mentioned in the Vinous review certainly exist. Should be great with some time in bottle.
