  • Popped and poured. I did not read Brigcampbell's note before opening, so I had a bit of a mess to clean up. Cloudy and light salmon color. Yeasty grapefruit aroma. Grapefruit flavor up front, yeast and minerals mid palate, mineral laced sweet peach in the finish. Funky, complex, firm backbone, absolutely delightful.

  • This is made in the style before Methode Champanois. Very rustic. Andrew told me to put this in the freeze for a bit before opening because it'll bubble up. So I did. It's bottled with a cap so I took it outside to open for fear of the blow back. Opened it and barely a spritz... Huh. Back into the house. Oh wait here it comes like a boiling pot of water. Get me a glass ASAP! LOL

    Wine looks like fresh squeezed guava juice, pinkish and loads of chunks of grape goodness. That could be decanted off but why? Rustic is the perfect description.

    Strong pink grapefruit flavors and very light effervescence. It's like a mimosa in a bottle. Paired with a cheese and fruit platter was perfect. Very enjoyable and bonus points for the entertainment value.

  • This was delicious! Both with and without the lees being mixed in. Watermelon, but especially wild strawberry. Nice acidity and creaminess from the less/Brett/whatever else is in there.
    My only kvetch is that we lost a good bit of the bottle and the bubbles when it just fizzed up like mad right after opening! No idea why that happened, as we didn't shake the bottle up or anything. It also didn't "explode" like you'd expect - just a slow constant fizzing up. What remained was still delicious but mostly devoid of bubbles.

  • Visually it looks like guava juice in the bottle and when poured it is slightly cloudy. Quite fizzy with a flavor that tastes like a wine/beer hybrid. The fruit is appropriately ripe, lightly tart and a bit yeasty. No apparent sweetness. Quite interesting; we enjoyed this with an appetizer of Stilton cheese. Hard to contextualize because of its uniqueness but very pleasant.
