BYO (Michaels place): Red apple fruit with a touch of vanilla and sweet baked sugar cookies. Clean and refreshing acidity but also some toasted bread with honey. Lovely wine and for me it is at its peak.

Dinner at RPM Steak (RPM Steak - Chicago, IL): Seemed advanced for its age. The fruit was soft and supple with mostly pear and apple tones. Interesting layers of yeasty and bready notes with some soft florals. What this didn't have was a edge and firmness that a lot of 1996s still have. Regardless, I still thought this was quite good.

Dinner at RPM Steak (Chicago, IL): A somewhat austere nose featuring a slight bit of bread on the nose. The effervescence isn't too strong now, with the bubbles fading away quite quickly. Lovely acidity and a good biscuit quality. Definitely shows a bit of age, but I imagine this was a pretty typical showing for an approximately 20-year-old bottle of bubbles. Ready now.
