First of 3 bottles. Cork in good condition. The hue is a lighter golden one. The nose is quite evolved but also complex and intriguing. The noticeable acidity gives the wine freshness and tension. The nose combines savory and floral notes with aromas more associated with Sherry. I will not describe the wine as oxidized as the aromas are not dull or diminished The finish is quite long with a lingering flor note. I expect it to evolve quite slowly. Great food wine..

Weekly tasting group #170; First group dinner with a nice set of wines.: Very tasty wine with nutty and oxidized flavors. Minerals as well. Good acidity and some sweetness. If you like the oxidized style this definitely is your thing and the Papillon can age beautifully in general, although imho this bottle lacked a bit in freshness. No score.

I had no idea what his wine held in store for me. I mistook this for a dessert wine , based on previous experiences with this winemaker, and this could not be more different.
Took a bit to get this wine ( a few hours after opening, at home, with some time). Spicy, almost like lightly mulled wine, cardamon and cloves, grapefruit. Pleasingly wooly oxidative feel. Good honeyed background. So peppery, dances on the palate. So powerful. Fabulous. New experience with this subregion of wine. Took a bit of exploring to appreciate. So glad to discover something different. A new treasure. Another bottle left. There is some 2008 of this locally available, Going to have to see what it holds.

Dark yellow colour. Perfectly mature Chenin Blanc nose, not oxidized as some people say, this is how old Chenin Blanc should smell: white truffels, bicycle rubber (new tyre) and some overmature apples. Good fatness on the palate for a Papillon, almost like the 1999. Clearly a better wine than 1995 and 1998, probably due to the warm growing season in Loire in 1997. Good balancing acidity as always in Baumard. Lovely glass of wine, very individual, interesting and inspiring.

A bit over the hill. Still has something to show for itself, but beginning to take on some oxidized notes. I have one more. I will not wait long to open it.

White Icons @ my place (Netherlands): This is a regal wine showing beautiful notes of warm blonde tobacco, tomatoleaf, peaches, banana, apricot, citrus oil, honey and marshmellows. All this, elegantly framed by judiciously titrated oak. Very powerful and off-the-charts complexity and minerality. Topped off by vivid, playful acidity. Fantastic wine. 18.5/20

Complex bouquet with soft yellow tropical fruits and some minerals. Also soft on the palate with asparagus, some nuts, good bitterness and a pleasant oxidised tone. Beautiful wine.

What's next... een uit-mijn-dak Sauvignon Blanc??? ;-) 50 + Kleur: 5 + Aroma / bouquet: 12 + Smaak / Afdronk: 17 + Algemeen / potentieel: 8 = 92/100

Concentrated bouquet with butter and some banana. Soft and friendly in the mouth with minerals and good acidity. An excellent, but not overwhelming wine. Possibly it needs more time.

interesting; slightly amber colour; distinct secondary flavors; somewhat oxidative character (not a flaw, I think -- I find this consistently with the Baumard savennieres). Lacking a bit in concentration, but a decent example of type.

Piercing, almost rotting honey nose (think mead) with more fresh herbs and almost white grape juice notes. This had wool, mineral and some green fruit flavors. This was nice but lacked something to be great. Seems near peak, but perhaps can hold for a few more.

A Loire Extravaganza ("Villa M", San Francisco): Light, bright yellow. Faint honey and tropical fruit on the nose. Round, long, fresh, and balanced with good remaining acidity. Not as earthy as Savennieres can sometimes be. Excellent.

Richer than the 1996, more waxy pear-like fruit and less floral nose. Didn’t have as much of a problem with hollowness, more of a record skip than a full on hole, but nonetheless, wasn’t what I had hoped.

Really great waxy nose with loads of yellow plums and a good hint of minerality. The palate was a little bland in comparison as it seemed to be somehwere in the middle of turning into an older wine, going diedel. Made it sort of out of whack with the nose. More fun to smell than taste, but I had this without food, which could have been a mistake.

Beautiful wine. Still youthful with many years to go. This was showing layers of white fruit, hints of honey, and very smooth, silky texture with a long clean finish, underneath everything was a solid backbone of acidity and mineral. Wish I had more.

by Jock. Wow do I love this wine. Rich nose of honey and minerals carries through to the palate. Despite the honey the wine is bone dry. Great depth and complexity and a long finish. Sensational stuff

Paired with a walnut tart and a mesclun salad with grapes and goat cheese. This wine was crisp and precise in its pear and mineral accents, yet seemed to expand and fill the mouth on the finish. A fine Savennieres that can be drunk now or cellared long-term.

And really my WOTN. Pretty stunning at 25. Bright yellow color. Slight sweetness. Savory unmami element with a Chenin roundness under some wisps of acidity. Vibrant and almost seeming youthful. Sails on. Kept evolving.
