    3/12/2015 8:10:00 AM - The 98 Chapoutier l'ermite we had last year was magnum. It was not aerated enough prior to service (maybe 2 hours in decanter); not for my palate, anyway. If you're serving a 750ml, it might be ready with 3-4 hours of air in decanter. If it were me, I'd open the night before, decant, and immediately return to bottle. But I go too far, or so I'm told. Either way, nearing/at peak. I don't think you can go wrong. Would love to see it side-by-side with the '99.

Especially as we seem to have very similar taste in what we cellar :-)
