  • From 75cl, perfect cork, opened but not decanted 1 hour. Superb fresh youthful GC Chablis from a great year, entering early maturity. Hint of struck match, tangerine, plenty of grapefruit, strong acidity, supermodel-slim but now better in balance than 5 years ago. Brilliant match with my favourite salmon recipe. 92P
    After pouring nearly a thousand Euros worth of undrinkable premoxed 2008 Chablis from Dauvissat, Fevre etc. down the drain it is a real shock finally to encounter a bottle which not only survived, but still had years, perhaps decades of potential, as professional reviews promised back in the day. Infuriating, but at least I can now remember why I misguidedly chose to invest all that money, even if it turned out to be the worst wine decision I ever made.

  • From 75cl, perfect cork. Sea-breeze/iodine, lemon, tangerine, (honey) scent; light-bodied entry with immensely concentrated acid (my teeth hurt!) like drinking pure lemon juice with a bit of grapefruit and some sour tangerine. Sour, mouth-tingling, “mineral”, persistent finish. Less weighty and more acidic than any GC I have tasted from Dauvissat, Fevre etc. and utterly different from Bessin's 2008 basic Chablis and 1. Cru wines. Very fine, but hard work right now. I guess this is 91-92P(?) —no pain, no gain. Can anyone tell me if the acid diminishes/comes into balance with more time?

  • Coravin tasting: Open and ready. Rich, intense, classic Chablis with beautiful long, lemon finish. Went great with smoked salmon.

  • Medium lemon. Pronounced aromas of green apples, lime, grapefruit, iodine, vanilla, smoke, hazelnuts, honey. Developing. Dry, high acidity, medium alcohol, full body, pronounced flavours similar to the nose but with clear minerality and very long finish. Outstanding quality - beautifully balanced and great depth of flavour.
    Sadly my last bottle of the six. Still frustrated that 3/6 were suffering to some extent from premox, but the others were exactly what GC Chablis is all about.

  • Finally, a bottle in perfect condition with no hint at all of premox. Now this is what GC Chablis should be like.

On the basis of this bottle, it has plenty of life left in it, but based on the other bottle, I don't think it is worth the risk.

  • Lovely, well-balanced Chardonnay with ripe lemons and cream on the nose and the taste. Not overtly powerful but the balance is on the money.
    It doesn't get much better than this at this age. Probably could have gained more complexity with age but, unfortunately, this was my only bottle.

  • Pale gold colour. Baked apples, citrus, hint of oak, nuts, smoke. Developing. Dry, high acidity, great balance. Pronounced flavours and long finish. Very good quality. But I wouldn't hold this longer - this is developing quickly and my hunch is that it won't last. In retrospect, probably suffering from early stage premox.

  • Early stages of premature oxidation. Drinkable, but past prime. Bought upon release, and ideally stored. Chablis should last longer than this bottle did. Not rated.

  • Plus tendu que la dernière fois, long et droit. Il perd graduellement son enrobage de bébé pour gagner en sérieux. Très beau Valmur et superbe rapport qualité-prix.

    -slightly advanced nose
    -med+ acidity, moderate mid-palate sap, slightly more oxidized than anticipated, not overly complex, some pineapple tropicality
    -mildly more oxidized than anticipated, decent but not clearly of Grand Cru quality

  • Un vin texturé, sur le fruit exotique et un côté amer agréable. Belle longueur, ça coule tout seul mas arrivera-t-il à développer un peu de complexité avec le temps?

  • Un vin un peu fermé à ce stade, pas très exubérant au nez. La bouche est mieux, texturée et tout en finesse, sur le fruit blanc et une pointe d'agrume. Belle bouteille en devenir je l'espère.

  • Quite classic Chablis but suspect this is a touch closed. Nose was quite floral with some hints of sea and minerality. Huge acidity and lemon on palate. Wonderful with oysters although a little subdued with lemon sole meuniere (taste like a very young village or 1er Chablis). It had a touch of what I think of as envelope glue but I really need a better name as doesn't make it sound very appealing (but I only ever get this in Chablis).
    There is a faint hint of mustiness on the back palate that strikes me almost like a faint corkiness but I don't think this is corked - nothing on the nose, and its so fresh and lemony anyway, this is probably just some further complexity I think, its almost like a dry envelope or brown paper bag (whereas cork taint is a more foul wet cardboard).
    This may need more time to open out. It's got great structure now but doesn't seems like it can give so much more. Of course I say all this knowing its a Grand Cru Valmur from a great producer and a great year - if this was blind I would guess a good 2010 1er Cru.
    30 minutes later and without food - wonderful primary lemon notes here. I also got some flashes of some great Cote du Beaune 2008s I've had, even though this doesn't seem oaked but I suspect it may have old oak.
    Reading above again, I'm all over the place with this wine - but that is a sign it's complex and may have a lot more to give over coming years. Above all else it taste primary but with tastes going off in different angles as it opens up. It definitely is seducing me! And it is so unquestionably Chablis! :-)
    ... Another 15 minutes passes: this is just wonderfully complex! And a very long finish. I also have to use two words that I've often seen in tasting notes (especially on riesling): it is seductive and it dances on the palate. I've never understood those phrases before until this wine.

  • Chablis and Champagne 19-22.09.2011; 9/19/2011-9/22/2011: Closed down tight. SO2 and caramel at first, joined after 10 minutes in the glass by white fruits and floral notes. A big wine with a bitter finish at this infant stage. 7-8 years to maturity? €22 au chai. 89-91P(??)
