  • From 75cl, perfect cork, opened but not decanted 1 hour. Superb fresh youthful GC Chablis from a great year, entering early maturity. Hint of struck match, tangerine, plenty of grapefruit, strong acidity, supermodel-slim but now better in balance than 5 years ago. Brilliant match with my favourite salmon recipe. 92P
    After pouring nearly a thousand Euros worth of undrinkable premoxed 2008 Chablis from Dauvissat, Fevre etc. down the drain it is a real shock finally to encounter a bottle which not only survived, but still had years, perhaps decades of potential, as professional reviews promised back in the day. Infuriating, but at least I can now remember why I misguidedly chose to invest all that money, even if it turned out to be the worst wine decision I ever made.

  • From 75cl, perfect cork. Sea-breeze/iodine, lemon, tangerine, (honey) scent; light-bodied entry with immensely concentrated acid (my teeth hurt!) like drinking pure lemon juice with a bit of grapefruit and some sour tangerine. Sour, mouth-tingling, “mineral”, persistent finish. Less weighty and more acidic than any GC I have tasted from Dauvissat, Fevre etc. and utterly different from Bessin's 2008 basic Chablis and 1. Cru wines. Very fine, but hard work right now. I guess this is 91-92P(?) —no pain, no gain. Can anyone tell me if the acid diminishes/comes into balance with more time?

  • Coravin tasting: Open and ready. Rich, intense, classic Chablis with beautiful long, lemon finish. Went great with smoked salmon.

  • Medium lemon. Pronounced aromas of green apples, lime, grapefruit, iodine, vanilla, smoke, hazelnuts, honey. Developing. Dry, high acidity, medium alcohol, full body, pronounced flavours similar to the nose but with clear minerality and very long finish. Outstanding quality - beautifully balanced and great depth of flavour.
    Sadly my last bottle of the six. Still frustrated that 3/6 were suffering to some extent from premox, but the others were exactly what GC Chablis is all about.
