No details on cork/label but this looks old (no idea when I got it), I’d say 10-15yrs in bottle. No pop but still a gorgeous mousse, deep and full bodied but with high acidity and noticeable tannin. Seems ripe and very low dosage. Very well made - rich and natural oxidation. Amazing combination of Pinot fruit, freshness as if a BdB and a very classy mousse and mouthfeel. The sensations over-ride the palate of crunchy apple, honey and cinnamon- and faintly chalky and floral nose. Great with or without food. I paired with an aged cohiba piramides extra. 94-95pts

Based upon 2010 juice disgorged in 2012. Dull medium yellow, lightly effervescent. Subtle yeasty aromatics. Gorgeous medium weight, vivid, dry black cherry fruit and spice followed by a ton of soil and stone. I thought it was somewhat austere when I last tasted it in late 2017, but it has come on like a champ over the past 2+ years. I loved this bottle tonight.

Smokin Meat and Serious Syrah 2.0 (Westport, CT): Always a favorite wine for me. Here again the acid is a bit on the higher side. It's also kindof young and tight. There's always an interestingness to these wines. Unlike the Pierre Peters it's not just a standard champagne. Something a bit different. Tasty.

Disgorged April 2012. Ahhh. Now back on form after a few down bottles. Light color with tiny bubbles. Fine nose that shows nice depth of grape / apple fruit and lightly toasted brioche. Glides across the palate and leaves a trail of winey flavor. Clean yet robust. Really good. (94)

Striking chalky minerality. Acid is a little screechy. This does however have nice roundness on the palate with sufficient ripeness to tow the line between an acidic palate burner and a more fruity champagne. Extremely refreshing after a first hot day in Hong Kong.

Im so tired of boring wine... wine that is flawless, correct, excellent, uninteresting. Inflourescence is, thankfully, not that, at all.
I bought this little bundle of deliciousness maybe 8-10 years ago, and hope i can dig up more out of my highly organized (not) cellar. Complexity abounds: orangina soda, froot loops and banana now’n’laters, malted milk, fine clay, good yeasty bread, and plenty of depth and mouth feely glycerine. Everything wrapped in soft cushion of fine bubbles; the package implies sweetness without betraying a hint of sugariness or cloy (citrus undertones give it wonderful cut). Its easy to miss just how good this is, and if i remember correctly, my early tastings were disappointments. Should we be angry that a NV champagne took years to come into its fullness of being? Whatever, that which was missing or disjointed then has rounded and resolved into an understated and complex package, as if garish red velvet curtains have parted to reveal a work of fine art. Love it.

Wow - this was a great champagne and just singing. Drank next to a 2010 Cote de Bachelin and this really showed well. From the 2005 vintage and disgorged in 2012. Lots of bubbles. Much of spice and kindof a white pepper flavor in there. Almost some sweetness too. Almond essence. Really beautiful and a great finish.

Disgorged April 2012. Pale color. Fresh nose of apple and berry. Medium weight - this is a sneaky bottle that can lull you with its rather monotone initial wave. However, more layers quickly emerge and depth and complexity show. A wine of balance and surprise. Delicious if not the best bottle of this I have had. (91)

This is my favorite "regular rotation" champagne. Rich flower and brioche nose that penetrates the senses. There is a winey seriousness that just coats the palate. Wonderful length but not at all heavy. You can almost taste the grapes. Seriously good. (93)

With lunch at Kitchen W8. PnP then some saved for dessert. Initially lemon and chalky minerality, very pure as Bouchard's wines are. As time went on, the richness increased and red fruit (red apple) showed through. Nice and fine now, maybe better in a year or two. V11, disgorg May 13. ***1/2

We started with Cedric Bouchard, Roses de Jeanne, Inflorescence, Cote de Val Vilaine Blanc Noir Champagne NV. Wow, wow, wow!!! This is a winner 👍 and equally important, a “wine from champagne” as opposed to a “champagne from champagne”. Pinkish, yellowish/green on the eye, slightly yeasty and supremely evident Pinot Noir tones on the nose, drier than dry, barely a bubble evident in the glass (do NOT sip from a flute, even a good one, as this wine deserves more width in the glass), smooth down the palate and a relatively long, gorgeous finish. Although not a “vintage” and considered his “second” wine, Bouchard brings the same single vineyard, hand-harvested, foot-crushed excellence to the Inflorescence. We love Zero Dosage!!! At approximately USD50 per bottle, the value of this wine that will lay down for quite a few years is unquestionable!!!

Aaaargh another badly flawed bottle of this one, and I think it is the same April 2013 disgorgement again. Though in terms of variety this one had a nasty rotten egg aroma that just would not go away during the 2-3 hours we allowed it to breath. Am I just really unlucky or is it common for this wine to show a lot of bottle variation? Both my bottles were bought in the region (520 and Cave des Sacres) so there has been neither much transportation nor bad storage.

Deg 2011. Lovely pure fruit on the nose, with some bread and nuts to back it up. Great mousse and nice fruit on the palate. The wine lost its charm surprisingly fast and after a few hours I found it a bit flat and one dimensional.

2013 disgorgement. Not a pristine bottle with a lot of sulphur on the nose that just wouldn't go away. Still one can find apple, minerals and coffee notes on the nose. Firm, dense and large mousse. Very dark toned, unclean flavor profile with a good deal of detached sweetness. Meh, I was really eager to finally try a Cedric Bouchard fizz but I guess I am just going to have to wait some more.
EDIT: It seems like some 16 hours later the sulphur has almost completely vanished from the nose which now seems more or less corked, while still being able to offer fairly clean citrus fruit with a dark hue. Hints of toast, coffee and cherries can also be found. There is now freshness to the palate, which is quite vinous and mouthfilling, though with good vitality and acidity. There is some tangy citrus fruit along with minerality but mostly the taste comes off very Pinot Noir-like with its dark fruit and earthy flavors. The palate also manages to offer some enjoyment, while also showing obvious signs (lack of brightness, damp cellar kind of a feel to the flavors) of the wine being flawed.

Champagne Tasting at Gordon's (Gordon's Fine Wine & Liquors): The last wine in the tasting after a string of underwhelming Champagnes and with a tired palate, this really shone through. Gorgeous smoky toasty nose almost like a good white Burgundy. Beautiful fine mousse, dry but very full and round. Acid is not too high. This is a delectably supple, elegant Champagne. $60.

Disgorged April, 2011. Mostly 2009 fruit. Light yellow. Vivid, ripe Mandarin orange and apple aromatics. Medium weight. Transiently sweet entry but then tremendous tart lemon and terrific stoniness. Just delicious-I wish most 2009 Chablis had this whiplash of a finish. It is hard to believe that this is a Blanc de Noir, though. Very atypical in that respect, not that I'm complaining, and also quite different from the red fruit character of the prior year's cuvee. To be fair, though, as it sits open, it tastes more like Pinot.

Made in a leaner style, I was slightly disappointed with this rather one-dimensional wine. Yes there are lemons, yes there is a bit of brioche, yes it is quite well made, but somehow it all seems rather uninspiring. Neither rich enough to appeal to most Blanc de Noirs fans, nor straight enough for those who prefer a tauter style, this simply failed to catch my imagination.

Grower Champagne for Third Thursday (Willamette Wine Storage): Citrus scents are dominant here with limes and orange blossoms in the foreground, and a bit of baguette in the background. It's even on the palate, showing gentle flavors. Light oranges and chalky notes linger throughout the experience. Acid and apples appear on the mid palate. Everything is soft, but the acidity doesn't entirely seem to be connected to the fruit.

Lieu-dit Cru "Blind White" Dinner Featured the Wine of Henri Boillot (L2O - Chicago IL): Great side-by-side comparison tonight with another Bouchard NV Blanc de Noirs, the La Parcelle. Val Vilaine started with concentrated fruit aromas and a bready, yeasty character. Palate also showed good concentration but that toasty/yeasty character was in the forefront and was a bit one dimensional.

Dinner with Friends (Ducru, Hillside, Scarecrow, +) (My home): Another great showing for this wine. Golden in color. The nose is bread crumbs with some strawberry notes. Lots of small bubbles. Crisp and clean with a slight Vernor's soda note on the palate. Lots of complexity as well. A real crowd pleaser.

Bouchard, Chidaine, Urbans-Hof, Veglio, Seven Stones, Alban, Keplinger (My home): Not quite as good as a prior bottle but still delicious. Silvery/gold in color with a lots of small bubbles. The nose has some seltzer, yeast and just the slightest hint of almonds. On the palate, there is some strawberry and some seltzer notes. A bit of an earthy undertone. Nice balance and easy to drink. Good start to the evening.

This is a very good entry level sparkler from Cedric Bouchard. Although it does not have the same amount of depth or complexity as the 2008 based Roses de Jeanne Les Ursules, it is still a very well balanced wine with a good depth of flavors and minerality. I get Blackberry, kiwi, citrus, strong minerality, and a little bit of natural sweetness even though this wine has no dosage. This is very light for a pinot based wine and would be best served on its own or with light appetizers rather than with a meal. Pick this up if you can find it for under $50. Once you get over the $50 range there are too many other great champagne's that are a better value in my eyes. For example, this cannot compare with the 2002 Camille Saves at the same price point.

Once again this was a very good champagne that was perfectly balanced with excellent precision. It was also very light (especially for an all pinot based wine) and had great forward berry flavors along with good minerality. Very good.

This was my first experience with a Cedric Bouchard champagne and I was impressed. This is a very light wine for a blanc de noir, but it pulls it off very well. The nose gives off wonderful fresh berry arromas and the first taste reveals blackberries and crushed rocks. Everything is very well balanced and the lack of dosage is not noticeable (however, I still wonder if this would have been even better with 2-3 g/l of dosage). It also has good length on the finish. A very nice champagne.

Dinner with Friends (Bouchard, Hirsch, Vissoux, Brunello, Bea, Saxum, Kapscandy): My first time trying this wine. One of the best NV's I have had. The nose is just awesome, a bit of vanilla, a bit of grapefruit, a bit of earthiness to it make a big and complex nose. Smooth and goes down great. Just a hint of sweetness from the ripe fruit I am guessing. Pinpoint balance. Long finish. Nice small bubbled mousse. This was a big hit.

Aaaargh another badly flawed bottle of this one, and I think it is the same April 2013 disgorgement again. Though in terms of variety this one had a nasty rotten egg aroma that just would not go away during the 2-3 hours we allowed it to breath. Am I just really unlucky or is it common for this wine to show a lot of bottle variation? Both my bottles were bought in the region (520 and Cave des Sacres) so there has been neither much transportation nor bad storage.

Deg 2011. Lovely pure fruit on the nose, with some bread and nuts to back it up. Great mousse and nice fruit on the palate. The wine lost its charm surprisingly fast and after a few hours I found it a bit flat and one dimensional.

2013 disgorgement. Not a pristine bottle with a lot of sulphur on the nose that just wouldn't go away. Still one can find apple, minerals and coffee notes on the nose. Firm, dense and large mousse. Very dark toned, unclean flavor profile with a good deal of detached sweetness. Meh, I was really eager to finally try a Cedric Bouchard fizz but I guess I am just going to have to wait some more.
EDIT: It seems like some 16 hours later the sulphur has almost completely vanished from the nose which now seems more or less corked, while still being able to offer fairly clean citrus fruit with a dark hue. Hints of toast, coffee and cherries can also be found. There is now freshness to the palate, which is quite vinous and mouthfilling, though with good vitality and acidity. There is some tangy citrus fruit along with minerality but mostly the taste comes off very Pinot Noir-like with its dark fruit and earthy flavors. The palate also manages to offer some enjoyment, while also showing obvious signs (lack of brightness, damp cellar kind of a feel to the flavors) of the wine being flawed.

A private dinner (Restaurant Silvio Nickol **, Palais Coburg, Vienna, Austria): Base wine 2008. Very pale colour for a Blanc de Noirs, very fine bead: Fruit-forward and open, floral, very clean, fresh and precise, with a lovely minerality; good length. Very precise winemaking here.

Champagne Tasting at Gordon's (Gordon's Fine Wine & Liquors): The last wine in the tasting after a string of underwhelming Champagnes and with a tired palate, this really shone through. Gorgeous smoky toasty nose almost like a good white Burgundy. Beautiful fine mousse, dry but very full and round. Acid is not too high. This is a delectably supple, elegant Champagne. $60.

Made in a leaner style, I was slightly disappointed with this rather one-dimensional wine. Yes there are lemons, yes there is a bit of brioche, yes it is quite well made, but somehow it all seems rather uninspiring. Neither rich enough to appeal to most Blanc de Noirs fans, nor straight enough for those who prefer a tauter style, this simply failed to catch my imagination.

Grower Champagne for Third Thursday (Willamette Wine Storage): Citrus scents are dominant here with limes and orange blossoms in the foreground, and a bit of baguette in the background. It's even on the palate, showing gentle flavors. Light oranges and chalky notes linger throughout the experience. Acid and apples appear on the mid palate. Everything is soft, but the acidity doesn't entirely seem to be connected to the fruit.

Lieu-dit Cru "Blind White" Dinner Featured the Wine of Henri Boillot (L2O - Chicago IL): Great side-by-side comparison tonight with another Bouchard NV Blanc de Noirs, the La Parcelle. Val Vilaine started with concentrated fruit aromas and a bready, yeasty character. Palate also showed good concentration but that toasty/yeasty character was in the forefront and was a bit one dimensional.

Bouchard, Chidaine, Urbans-Hof, Veglio, Seven Stones, Alban, Keplinger (My home): Not quite as good as a prior bottle but still delicious. Silvery/gold in color with a lots of small bubbles. The nose has some seltzer, yeast and just the slightest hint of almonds. On the palate, there is some strawberry and some seltzer notes. A bit of an earthy undertone. Nice balance and easy to drink. Good start to the evening.

This is a very good entry level sparkler from Cedric Bouchard. Although it does not have the same amount of depth or complexity as the 2008 based Roses de Jeanne Les Ursules, it is still a very well balanced wine with a good depth of flavors and minerality. I get Blackberry, kiwi, citrus, strong minerality, and a little bit of natural sweetness even though this wine has no dosage. This is very light for a pinot based wine and would be best served on its own or with light appetizers rather than with a meal. Pick this up if you can find it for under $50. Once you get over the $50 range there are too many other great champagne's that are a better value in my eyes. For example, this cannot compare with the 2002 Camille Saves at the same price point.

This was my first experience with a Cedric Bouchard champagne and I was impressed. This is a very light wine for a blanc de noir, but it pulls it off very well. The nose gives off wonderful fresh berry arromas and the first taste reveals blackberries and crushed rocks. Everything is very well balanced and the lack of dosage is not noticeable (however, I still wonder if this would have been even better with 2-3 g/l of dosage). It also has good length on the finish. A very nice champagne.

Dinner with Friends (Bouchard, Hirsch, Vissoux, Brunello, Bea, Saxum, Kapscandy): My first time trying this wine. One of the best NV's I have had. The nose is just awesome, a bit of vanilla, a bit of grapefruit, a bit of earthiness to it make a big and complex nose. Smooth and goes down great. Just a hint of sweetness from the ripe fruit I am guessing. Pinpoint balance. Long finish. Nice small bubbled mousse. This was a big hit.
