This has aging nicely. It needed a solid 4 hours in the decanter to blossom so that the fruit could balance out the acidity and mountain tannins that dominate upon opening. Once it came together, the fruit became fleshy with a velvety mouthfeel and the secondary flavors of tobacco, mocha and cedar peaked though. A flavorful finish although somewhat clipped. I would advise opening sooner than later as I'm afraid the fruit is fading and will leave an acidic, tannic wine only capable of being enjoyed with the right food.

Perhaps this wine was more interesting than delicious, if that makes sense: somewhat rustic and textured, with bright acidity and muted red fruit. Reminded me of some volcanic Italians.

Very nice nose, delicious blue and dark fruit, sweet tannins, nice balance and good finish. Drinking very well. Paired well with a cheese and charcuterie plate.

I was expecting much more from this 07 Cab. Just decent, very closed down nose and very one dimensional on the pallet. I would not recommend someone purchasing it.

opened for two hours. The initial taste and smell, after opening, and nose was very good. It faded quickly over time. Which disappointed me. I was hoping I could age the balance of my bottles until 2020-2025. I may need to drink up.

Splash decant and drink over an hour as other wine would not open up. Probably would have even scored higher if it had more time to open and round out. Nice full-ish body but with acidic freshness. Dark red color with no bricking. Tart dried cherry and cranberry flavors with fine integrated tannins. Acidity was a little out of balance but added freshness and vitality. A touch of trademark Tor spice.

This note is several weeks after consuming. I made a couple of hand notes: "rich, delicious, great finish." So, yeah, I think it was good. Last one I had and other folks polished it off.

Great nose of black raspberry,red currants, blackberry, sour cherry, and spice. On the palate, black currant, sour cherry, vanilla, spicy oak. Long finish with plenty of grip. Entering a very nice drinking window. Should drink well for the next 10-13 years

Okay so this is fun. Without looking at my tasting notes, we drank today this Tor 2007 Cimarossa along side the 2006 Ramey Larkmead Vineyard. I loved the Tor and still give it a 93. Lots a rich loamy earth, with hints of tarragon, allspice, maybe some safforn and crusty dried cherry. A 20-30 second finish and sweet tannis to take you home. BUT, for my money the Ramey is now ahead, with a certain sweetness of tannins and a longer finish. THIS IS WHY I LOVE WINE!!!!!! It has totally changed.

Wow. Smooth and silky with hints of dried cranberry, subtle notes of dark chocolate and cinnamon packaged together in 30 - 40 second finish. Drank with grilled steaks and good friends alongside a 2006 Ramey Napa Valley C.S. Poor Ramey, which is a real wonderful wine, looked beleaguered in comparison. I am delighted with this Tor, and I wish I had a lot more to savor.

This is a great wine. Popped and poured. The initial few minutes were a little hot, with mostly menthol nose. After 5 minutes in the glass, tobacco, chocolate and dried cherry became predominant. After a few more minutes it just became quite sublime. My wife and I drank the whole bottle without even realizing it. This is smooth and wonderful.
My thoughts: Decant for 30 minutes to an hour next time. Also, try with a nice grilled piece of meat. Finally, I do not know that this will improve any more from where it is, which is not to say it is going downhill. I'm just not sure it will benefit from any more cellar time.

I can't rate this because on tasting the first bottle, some six months ago, it was years away from ready. My guess it will earn at least low 90's, probably not as good as today's WS rating of the 2009. Tannins were way over the top, but I am excited to try again in a few years. Comparable: Bryan Harper.

decanted 2 hours. deep ruby/purple with a ruby edge. rich black fruits, brown sugar, camphor, and a hint of chocolate. still young, with tannin up front and nice acids, but with great fruit following that persist then nicely fade from blackberries and plums to blueberries. a great bottle, looking forward to trying it again in a few years.

Tarry, overripe. Not showing near as well as the 05 recently. Disappointing. Still have a bottle and suspect it will show better, as the bottle I tasted with Tor was fantastic.

Young, well structured and enjoyable wine. A fragrant nose of dark fruit. Decanted and never got to this bottles full potential as it was very late at Del Frisco's in NYC but found nice dark cherry, cassis and a hint of cola.

Very enjoyable. Mostly cherries/plum and a backdrop of loam. The oak was pretty substanstial and I hope it will become more integrated. Big mouth feel. Just rough around the edges and finish is still a bit tight. We popped and poured. This may act better with some air.

Ran through an aerator and returned to bottle, left at room temperature for 24 hours. Quite approachable. Nose of cinnamon, cinnamon, cinnamon. Aromas of warm brioche, and notes of hoisin/soy and some floral elements. Deep veins of blackberry in the mouth, very juicy. The acid was quite high, hopefully will resolve itself and balance out in the next few years. I would call this an "elegant" cabernet. I have three more bottles, so we'll see what this looks like in 4 or 5 years. I purchased this at a discount, but it is worth the full price.

Tasted at the Wine Discount Center California Cabernet tasting. Much more ready to consume now than the other 2007 upper end bottles at this tasting (e.g. Caymus, Justin, Shafer 1.5, Cade and Larkmead). Soft tannins, loads of fruit on the nose and good finish.

K&L Charity Event. Lovely cabernet nose with cedar, anise, and currants, more of the same on the palate, soft tannins, big body, needs 4 years in the cellar to peak, lots of cabernet flavors, mouth filling almost chewy, long finish.
