  • I should say first, I'm not really ever a fan of Cotes de Beaune reds. This wasn't bad and definitely inexpensive for what you get. I opened it for 3 hours after seeing all the CT reviews. It wasn't enough. The last glass poured around 2.5 hours later actually started to come around and drink nicely. Decent aged Burgundy but not my style and not worth having to go to the trouble of opening so far ahead of drinking.

  • Lovely concentration of dark red fruits and spices on the nose and palate, with round tannins and a savory finish. A touch of floral is perceptible with swirling, but this is mostly about the fruit and spice. Has good depth and length with nothing over the top. Pavelot’s top Savigny, and a lot of class for the buck. In a perfect drinking window now and for the nest five years.

  • Burgs, Birds, and Black Truffles (My place, Portland OR): The nose has a robust and brawny quality with raspberries, sour red cherries, plums, earth notes, violets, leather, sweet tobacco leaves, licorice, and savory spices. There is good depth and style here with a bit of primary quality that still exists to the fruit. The Medium bodied feel is savory and robust with tart, medium+ acidity and slightly coarse, medium+ tannins. The tannins are still a bit present and rough with it not showing off much resolution. If the tannins are able to resolve, this could see some more upside but I'm not entirely confident of that at this point.

  • (Small glass tried with argon 2 days ago; very challenging briary, tart. Second small glass with argon, allowed to air in open glass overnight, much better. Note based on now opened bottle day 3.) This wine needs food and air to reward you. leathery, briary, red & black complex fruit, very good depth and length, perhaps even elegance eventually, but not much in the way of attractive aromatics to start. The quality of the fruit -the grapes- is excellant.

    Would never open this wine to show a friend the "easy" gorgeous fruit some burgs have, as it is the antithesis of that. Rigorous, structured, vins de garde wine made in a not fruit- forward year ... with lots of merit. An old-styled Cornas, or Savigny version of Faiveley''s Corton Clos des Corton, of Burgundy. Tonight seems like it will go 50 years, balance is right for now; and hope it persists.

    If you've never drunk wine like this, it elevates your pleasure in a food like a steak ... and rivals or betters other reds from around the world ... rarely add a personal comment to a CT note but this ugly duckling wine- with air - would blow away many other red wines and if you have some bottles, don't despair. Just air it and match the food.

    For now, open at least 3 hours before serving, and pair with food rich in protein and fat - for example, cheese - and this will shine. (Pop and pour... doomed to not show well well).

  • {Bought on release, professional storage since then, perfect fill} Tasted over 3 days. Day 1 a glass with argon fill; Day 2 opened to room air, and kept overnight with vacuum. Initial pours - quite briary, lean like a Beaune with savory fruits and some tartness. After ~ 3 hours of air really started to fill out and the complexity of the wine shone through. Delicious when fully aired.
