The wine was fizzing like sparkling wine upon opening. Aroma: yeasty and closed in the beginning but then opened up to wet stone, buttery popcorn, vanilla, honeysuckle, white flower and tropical fruits. Palate: lemon curd, honey, citrus, creamy, bright acidity with a medium-long finish. Paired with some white cheddar and it mellowed out the acidity greatly. It was also delicious paired with Caldo de Pollo. This is definitely a food pairing white burgundy. 90-91

I truly enjoy PYCM wines, but there was something odd about this particular bottle. It was not flawed, but it was flabby and nondescript. It had no dept or character. It possessed none of those great things that make PYCM wines so special. If I had to describe it in one word, I would say it was "there." Hopefully, my remaining bottles will show better.

Another wonderful PYCM wine. For the many Saint Aubins that they produce, this has become my favorite.
