6/23 disgorge. Fairly deep color for a young NV champagne. Overwhelming yeasty fruity nose on opening. Quite a bit lighter on the palate but has a long middle and even longer finish. I agree with previous notes; smoky apples and limestone are good descriptions. What I really like about this wine is the depth and richness of the palate for an NV grower champagne. Supposedly, this can age way better than most grower champagnes (my experience-- many taste great and then fall apart). But why bother? This is damn good now and likely damn good tomorrow. This is a great grower champagne with depth but also doesn't have to be consumed immediately. Nonetheless, at least now, it's also an interesting wine to let breathe and taste along the way. It went great with a smoked sockeye Alaskan salmon (slightly sweet) and kale salad, but I suspect it's super versatile and could go with anything from Dover Sole to steak tartare. There's clearly a good amount of pinot noir or pinot meunière as it's got a good fruity background. Bottom line: drink now or later. It's really nice champagne that is hard to go wrong with.

Glass: Spiegelau Definition Universal. Clear, medium golden with some copper reflexes. Very deep, floral and fruity nose, really beautiful. On the palate wonderful pressure and tension. Ripe apple, some smoke, passion fruit, autolytic notes. Rather reductive. A bit sweet, but not disturbing. Very good length. Beautiful. 92-93

Dinner with Kei Shiogai (The Grill): Degorge 07/23. Delicious and stylistic bringing me back to the days when nobody was noticing Bereche, crisp, acidic and easy aperitif. 91

disg 12/22. dosage 6gr/L 70% 2020 base. 1/3 each grape varietal nose - apple, honey mouth - very round but perhaps its a reflection of the dosage? has a homey apple pie quality to it. very easy to suck down, great balance. no harsh edges whatsoever.

3/2022 disgorgement. light gold colored. medium mousse with active fine bead. honey, toast, cocoa, walnuts on the nose. light bodied with good acidity. palate with some sweet toasted nuts, honey, roast apples, oranges, malted chocolate, and a lime zest finish. good finish with a well tempered sour aftertaste. well dosed for a brut, not too rich or cloying. excellent.
