Beast of a wine, despite a 3+ hour decant. Some liked this more than I did, but too big of a bite for me (compared to other better-integrated Saxum’s). Still a nice wine though, particularly with food.

Open THAT Bottle Night (Joe's Restaurante): Decanted for 2 hours, I believe, but not 100% on that (although I know it was decanted for some period of time). Drank over dinner (pork tenderloin). This is not the first Saxum I have had, but the first time I have tasted Paderewski. It was a little different, but very pleasant, and certainly in my wheelhouse!
The nose was perfumed with cherry blossom and lavender notes, some baking spice, some bacon fat and a twinge of alcohol. The palate showed no alcohol to me, but at least one person stated they could taste alcohol. This is still a big wine, as one would expect from Saxum, but very well done! Loads of black and red fruit, most notably cherry, plum and black currant. The palate also showed notes of jerked beef, some earth, some iron and some sweet toasty oak with shades of tar or anise. The texture was velvety and very pleasing. Easy 94+ to 95, and in a good place now, but no hurry to drink!

Open that bottle - Dan chooses 2014 Saxum Paderewski (My house): Decanted but I regrettably don't know how long, drank about 1/3rd of the bottle over 2 hours. Super heavy and powerful. I'm struggling for more descriptors because it is a big burly beast, although not jammy or sweet and only slightly alcoholic. The wine showcases vanilla oak, big fruit, pepper, sprice, iron and meaty notes.
