At the end of maturity and hinting at the beginning of decline. This is a beautifully modulated and complex Aussie Cab in a classic old-school American Oak/cool climate style. There is plenty of concentration and while fully mature and supple, it also displays a surprising tannic grip which lends focus. Old oak, a touch of lactic, coconut, cassis, lifted aromas, earth and spice about in nose and palate. The finish is extremely long but after a couple of hours in the glass started to thin out a bit. This bottle was not exactly drying out but one could see that in a few years, the beautiful length the wine has always (and still) possesses would begin to drop off. After 25 years the American oak is still very prominent but the bottle age nuance (especially in the realm of mineralogy and loam) give this wine extra dimension. Last bottle and I was pleased to drink this now.

Outstanding aged Aussie Cabernet. Dark brooding nose of leather smoke, cedar and American oak. Gorgeous mint (eucalyptus), very complex and layered nose - brilliant wine. In the mouth, crisp acid, great definition and a fine, subtle tannic and leathery finish. A wine whose proportions and mouth feel are similar to traditional bordeaux, although the flavours are completely different. Really fine wine that has transformed over two decades. It is reminiscent of older Spanish reds - which is appropriate as we had this wine with Serrano ham to begin. Not a blockbuster but a wine of intensity and nuance. Ready now but I imagine this should hold at this level for another 5 years.

Parker Coonawara Estate "First Growth" Cabernet Sauvignon 1991 - Don't let the words "First Growth" fool you. This wine is loaded with US oak and could only come from OZ. The wine is not ready yet - it is still a bit tight, but it is long and quite complex (for an Aussie Cabernet). I generally do not like the taste of US oak in Cabs (shiraz is another matter entirely), but it seems to work in this wine. The coconut and dill balanced the rich and ripe curraty fruit quite well. I'd give the wine another 5 years before cracking another bottle. Good potential for development - esp if the oak moderates and marries with the fruit.
