Knightsbridge Annual Wildman Burgundy Dinner (Peninsula Hotel - Chicago IL): Aromas of red and black cherry, dried herbs and reduced mushrooms. Palate was more earthy with good background cherry still apparent. Lots of dried herb and some spice hints come through on finish, which is surprisingly long, quite weightless and very elegant.

Burgundy vs. Piedmont: 1971, 1978, 1985 (Boka - Chicago IL): Served blind. Big fruit coming through on nose and palate. Really showed much younger than I'd expect from a 1978. Impressive spice coming through on finish.
