Wine needs to be decanted 3 hours in advance. Exquisitely dry. Lanolin, wax, hazelnut, and lemon zest. Initially a little too pungent but unfolded beautifully with a couple of hours of air exposure. I love this wine.

Macle's Château Chalon still is the best vin jaune I've tried after Overnoy's, but this is not the same price tag.
There is simply no better match for cheese for my taste, and a must have for any wine lover.
Bought at Domaine de Châteauvieux to match their matured cheese selection, 2h carafe. Kept half the bottle for 2nd day at home, wine was still perfect (not better though).
Superb glossy gold color with medium intensity. Strong, complex aromas of everything you can expect: plenty of nuts, forest, unidentified floral notes, not so much fruit but still have a bit of apple. This is confirmed on the palate. Very good balance, right amount of acidity to pair with cheese. The wine manages to strongly fill the palate with tons of flavours while giving just the right amount of space to the cheese (which must be strong / matured).
Its strength is the finale, long and intense, superb.

The oxidative character is, not surprisingly, very prominent. Firm structure, apples, very linear. But this shines with food, particularly the Comté. The combination brings out the best in both.

Power, precision, and grace. This bottle seems still young, with a tight core of bound-up nervous energy. Finishes long with salty caramel umami.
