  • Superb nose: pear, candied fruits, herbs, Catalan cream. Palate doesn't live up to the nose, quite rich with a slightly bitter finish. Disappointment with this bottle.

  • Extremely young color, green golden, brilliant. Closed nose at first, chalky and citrusy. After an hour it opens up to reveal tones of green apples, peach, a hint of vanilla, and lots of chalk and salt. Full bodied attack, a real punch of taste! Explodes in the mouth, lots of lemon, lime, green apples, and an extreme salty note that follows to the long aftertaste. fresh, slaty, chalky aftertaste. Will probably be better in 5-10 years. An extreme wine.

  • Wow! A wine for eternity, but still approachable now. Still green straw colored with a brilliant streak. The nose is classic Chablis at first: oysters, a salty note, seaweed. As the wine warms up it shows notes of lime, pear and chalk. And then some fine tones of coconut, probably from new oak (this note is a bit too pronounced to my liking, but it is still wonderfully integrated). Full bodied, almost sweet attack on the palate. Then a perfect acidity and and almost tannic dryness kicks in and lifts the aftertaste to a lemony and limey finish complemented with salt, chalk and a hint of coconut. This is one of the most salty wines I have ever tasted. A powerful wine, but still very elegant. Beautiful to drink now, but has just started its career. Will keep and evolve positively for at least a decade and probably more. Again: wow.

  • Clear straw yellow with a greenish hue. No clear signs of aging. Wonderful and expressive nose, first of lemon and lime with a hint of chalk, and as the wine warms up: tropical fruit in the vein of peach and pear. Add to this a hint of new oak in the form of cocoa and vanilla. Quite powerful, and more like a central burgundy than a Chablis (on the nose). The mouth, however, confirms that this is a Chablis. Full bodied attack, lots of peach, pear, lemon and lime that interchangeably dominates the mouth. Lots of dry stuff on the mouth adds to the complexity, leading into a long fresh aftertaste where the oak tones reemerge: vanilla and cocoa. Very long. A great wine. If there is anything to criticize about this wine, it may be that it is more reminiscent of a Puligny or even a Meursault than a Chablis, and that the oak is a bit to present at the moment. Anyway, a pleasure to drink (with grilled lobster it was magnificent), and probably at it's peak right now, but will keep for at least a decade to come.

  • Ay almost ten years of age, this wine is still light straw colored with clear hints of green. The young impression is reinforced on the nose: intense aromas of lime, green apples, only a hint of oak (vanilla), and a chalky almost dusty undertone. Full bodied attack on the palate, more vanilla and oak in the mouth than on the nose. Then the oak gives way to sweet lemon, lime and green apples, combined with hints of orange (!). Lots of fruit through the whole tasting curve, with an aftertaste that lasts for at least two minutes. Still incredibly young. This wine has clearly another decade before it will reach any optimum. Still wonderful to drink now. Do not serve too cold, this wine opens up when it reaches 12-14 degrees Celsius.
