Visually very evolved. I’ve had nearly 40 year old Sauternes that are less dark. Toffee, baking spices, blanched almonds on the nose. Inexplicably, tart green apple on the palette. The palette is so fresh. I have never experienced a dichotomy between nose and palette this great. Very interesting. I quite like it. I think this bottle would likely be an unrepresentative example though, for many it would be flawed.

Pours a rather worrying medium amber for such a young wine. Showing a similar level of evolution aromatically with almond paste, cinder toffee, and a touch of wood spice. The palate is in stark contrast - it’s supremely tart, as tart as gooseberries yet without the flavour profile. Most would consider this oxidised and beyond the point of no return. Unfair to score the wine based on this showing.

Completely flawed. My first White Stones/White Bones that's been undrinkable. Second bottle in a row spoiled tonight.
