  • Good wine. Waiting to drink this for a year or so after buying a bottle on the go - über die Gasse - from Zurich's Du Theatre restaurant during the Corona crisis.

    Great maturity now.
    Translucent on the eye. No signs of age.
    Soft-spoken, almost shy nose of raspberries. Mellow, but alive.
    Mouth a bit more down-to-earth, some acidity, minor petrol hints. Acidity suggests it would be a great accompaniment to food (and I would have chosen mild, fatty flavors such as tuna or salmon sushi for a next bottle). Mid-long taste.
    Not far away from the Auvernier wines of which I have a few more. In dubio whether I prefer this over the Auverniers, but picking up any mature Sebaste like this from a restaurant wine list is a clear yes
