Amazing at how good this wine is after I had opened it 3 weeks ago and saved it just with a wine stopper and pump. Better than the first tasting. Delicious ripe red fruit and good earth and complexity. Nice Dumol heavy. It did start loosing fruit rapidly after 45 mins, but not bad when I thought I was going to only use it for cooking.

Pulled the cork and poured a glass for a 30 minute dog walk, and elected to decant half the bottle upon return given its dark, primal condition. The nose bursts of rhubarb, dark red cherries, and currants in a damp pine forest.
Bit of air has made the wine much more approachable while showcasing Dumol’s heavier and richer approach to Pinot. There’s a sparkling purity from the red fruit, pomegranate and earthy flavors, with a slight tartness that elevates the front palate, though the finish lasts quite awhile across the entire palate. I’ve got one more of these in there. Certainly no rush to pull the cork.
While we’re enjoying this with grilled swordfish, ratatouille from the garden and potatoes, this can certainly stand up to hardier foods right out of the bottle.
Nearly 4 hrs after opening the wine continues to evolve and grow in complexity.

Great bouquet and flavors of dark red and black fruit with some spice and bramble notes. Very clean in the mouth. It’s drinking beautifully now. Drank over three nights with similar impressions. Very impressive.

Delicious ripe blackberry, dark cherry, mineral, and spice on the nose and rich palate with a long finish.
