Cavallotto Dinner (Acquerello, San Francisco): Medium ruby. Complex, perfumed, brambly scents. Some sweet/tart interplay of fruit and acidity early, but then it shifts toward being a terroir wine with long, earthy notes, and tobacco leaf toward the finish. This is the most soil-driven wine of the evening with a dry, tannic finish. Somewhat foursquare but very interesting and enjoyable at this young age. Good potential for further development.

Light ruby appearance. Nose of red cherry, fennel, dried herbs, smoked meat, liqorice. Ever so slight cooked fruit aromas reflecting the vintage. Full body, high tannin, intense fruit, long finish. Drank this over 2 days. I feel it drank better with a very short decant on day one. On day two, it’d shut down a little with the fruit hiding behind a wall of structure. I really need to hold onto these now for a while. Next one in 2 years.

On the nose, red cherry, lots of menthol!, fennel, red licorice, pepper, some subtle perfume, Ripe fruit on the attack with silky mid-palate. The long finish has an earthy character with strong umami component - almost like liver?!. High tannin but of an elegant, velvety quality. Decanted for 5-6 hours before drinking.

Decanted 1.5 hours, cherry, candy, rose, tannic, clean, elegant, good structure, long finish, will improve in the next 5 or more years
