Ruby-garnet with a pale rim. Some air opened it up but it’s a very subtle more mineral leaning nose - rose, tar, gravel, wood chips, iron. Vibrant acidity - red cherry, black pepper, burnt cocoa, unripe plum - clay like tanins with a long finish that moved toward silty. Really good stuff - light on its feet drinking alone but shone with food.
Aged for 36 months in 500L used barrels that he vaporizes then insides with super heated volcanic rock and then another 6 months in clay vessels he designed himself.
