Has medium lemon straw color. Has a ripe nose. Fresh peaches, some almond paste. Round palate, with nice minerality. Has a tangy saline note. Very nice wine

100% Chardonnay from 1 ha on the stony slopes of the village Milly with 45 yr old vines under organic farming. 25% of this wine is fermented and aged in oak barrels over 12 months. The remaining 75% is fermented and aged in stainless steel tanks on fine lees. 12.5% abv. History: 4th generation from a family of vine-growers started with Bernard Defaix with 2 ha in 1959. Grower: Didier Defaix Winemaker: Sylvain Defaix Manager: Hélène Jaeger-Defaix (wife of Didier), also owner of Domaine Jaeger-Defaix in Rully.
A(ccuray)=2: Med lemon/straw. Focused, intense varietal. B(alance)=2: Ripe fruit, compact structure. Bit short on vibrancy. C(omplexity)=2: Tropical citrus, toast, honey, saline minerality. D(epth)=1: Round mouthfeel. Med length and finish.
