  • Pale straw with a greenish hue. Lemon and green apple with a slightly bitter mark on the nose. Squeezed lemon juice and Granny Smith apple on the palate. I do not detect any minerality whatsoever. A high level of acidity. This is a very young Chablis. I hope it will gain weight and complexity with age. A bit simple today. UPDATE: Not budging at all after another 2 days in the fridge. Boy, is this a youngster. If I had more bottles than this one, I would put them to sleep for 5 years.

  • I had this wine open all week, and while the acidic backbone (noted in the TN below) kept it from degrading over four or five nights, it never reached the heights of a special bottle of Chablis. Very ordinary and unremarkable the first night, I stuck a cork back in the bottle and put it in the fridge. I returned to it the next night, after tasting some Fevre 1er Chablis, which really made this Defaix suffer in comparison. In particular, there was a lot of alcohol noticeable. But by the third night, the Defaix seemed to find itself and emitted good minerality, fruit and good acidity. Still, not a compelling bottle of wine. Best to pay a few bucks more for a better quality Chablis rather than this apparently low-end bottling (despite its "VV" label, which as is often the case, is worthless).

  • Acid freaks rejoice. This has acid to last a couple of decades. The good news is that there is decent fruit behind the acid. Right now, even after two nights in the fridge, this tastes like a muscadet / txacolina... Lots and lots of bright lemons and a ton of minerality... I would wait a few years to try this again... I am very curious to see how this develops...
