Lovely cherries on the nose came right away. Unfortunately, still closed tight as a drum. I hope I’m still around in 15+ years when it will be a lovely drink.

Deep purple color with a garnet rim. Lovely nose brimming with cranberry, cherry and and an herbal edge with notes of cigar leaf. There is a bit of sweetness and spice on the palate, brown sugar and apple cider spice, to go with the tart cranberry and apple skin flavors, finishing with some fine-grained tannins. Excellent Savigny, as you might expect from Pavelot

Purchased from Chambers St on release. This is in a really lovely place right now. Surprisingly dark color, near opaque ruby-purple. Effusive nose of wet stone, herbs, violets and bright cherry fruit. Still rather primary with a lot of structure and tannin, but with a lovely red fruit core, brimming with sour cherry, cranberry and raspberry flavors. Really lovely stuff that could still use a few more years of bottle age to really shine.

This has aged well. It’s gained some nice complexity and opened up showing soft tannins enveloped by classic red Burgundian fruit. Just needs a brief decant or a vigorous splash into your glass. Enjoy now - 2028.
